I'm back with another yummy dish!
Since I have hypertension, we started to practice a healthy lifestyle, not just for me but for everyone in the family. My husband is really a fan of meat (pork and beef), especially my humba and hamonada recipes.
But, we needed to cut them down for our health's sake. I still cook some meat dishes once in a while, but I mostly prepare vegetables and chicken dishes. I do understand that my husband is craving for some pork dishes he used to have in the past.
So yesterday, I made yummy pork chops with pineapple for our dinner.
So please come and join me on how I cooked it.
Yummy Pork Chops with Pineapple Slices
INGREDIENTS:
》500g Pork Chops (4 pcs)
》1/2 cup Tomato Catsup
》1/2 cup Water
》2 tbsp Brown or White Sugar
》2 tbsp White Vinegar
》1 can of Sliced Pineapple
》Lemon or Kalamansi
》Salt
》Magic Sarap Seasoning
》Ground Black Pepper
》Garlic Oil *(My husband personally makes this by roasting garlic in canola oil. That roasted garlic helps lower my blood pressure. I mix it with some raisins and have a bite in a day, and it really helps.)
PREPARATION:
Wash the pork chops thoroughly. Then marinate it with soy sauce, a squeeze of lemon juice, and ground black pepper, and set aside.
Peel and wash the onion and cut it into small pieces.
Crush and peel garlic, then cut into very tiny pieces.
Prepare and set aside all the other ingredients, like seasoning and condiments.
Now, let's start cooking.
COOKING TIME:
Heat some garlic oil in a cooker or pan just enough for deep frying.
Deep fry the marinated pork chops until they're all slightly cooked.
Then transfer them to a plate and set aside.
Remove the extra garlic oil from the cooker and transfer to a jar. (It's still reusable.)
Clean the pan or cooker and heat a small amount of canola oil.
Add the onions and garlic and sauté them until aromatic.
Then add the catsup, stir, and mix them for 1 minute.
Then, add water and the juice from the pineapple slices.
Season with sugar, ground black pepper, a pinch of salt, and magic sarap seasoning to taste.
Let it simmer for a few minutes or until the sauce becomes a bit thickened.
Then, switch off the heat. Let the sauce cool down a bit, then transfer it to a bowl.
Now, let's continue cooking with the air fryer.
Put aluminum foil in the air fryer pan or basket.
Put and arrange the pork chops.
Pour some sauce and cook to 180 degrees Celsius for 15 minutes.
After 15 minutes, check the pork, if it is already cooked and a bit dry, then flip the pork chops to cook the other side.
This time, pour again some sauce and put pineapple slices on top. Pour a little of the sauce into the pineapple, too.
Then, cover with foil and cook again for another 15 minutes.
Check them again after 15 minutes, and there you go...
It's nicely cooked already.
Transfer them to a serving plate.
When my husband and my daughter @tegoshei saw the dish I prepared, they were in much delight, especially my husband. He was very excited to eat right away... hehehe
Not to boast, but it's really yummylicious!!!😋 And we really enjoyed our meal. 🙂
