Creamy and Yummy Leche Flan: The Classic Filipino Dessert, Every Bite is like a Taste of Home-One That Melts Your Heart

Wonderful day and warm hello to everyone here @asean.hive. Today, I would like to share how we make Leche Flan. It is a creamy and smooth dessert with golden caramel top. This is a popular and beloved Filipino dessert. We love it because of its silky and rich texture.

This Filipino dessert is similar to crème brulee and crème caramel which primarily consists of milk and eggs. Others say that a truly yummy leche flan is only made up of egg yolks, but for today, we will use whole eggs. Well, if asked which version is better, this is just a matter of personal preference. Both versions will equally melt your heart. Now, let’s begin…

Ingredients:
5 large eggs
1 can evaporated milk
1 can condensed milk
1 teaspoon vanilla
a pinch of salt

For caramelizing the top:
1 tablespoon white sugar per Llanera
(Total 5 tablespoon)

We also need:
5 Llanera (oval-shaped pans)
Foil for covering the Llanera
Steamer

Steps:

1.Put a tablespoon of white sugar per Llanera and spread on the surface evenly.

2.Turn to low heat and with the use of a food tong, heat the Llanera and gently swirl it until the sugar melts completely and you get an even golden color on its surface. This part is delicate, it’s important to pay attention otherwise the sugar will be burnt.

3.Set aside. Let them cool.

4.In a clean bowl, combine 5 whole eggs, a can of evaporated milk, a can of condensed milk, a teaspoon of vanilla, and a pinch of salt.
Tip: Lemon zest or calamansi zest can also be added to remove the smell of eggs and to enhance the flavor.

5.With the use of electric mixer, combine everything while mixing gently. Do this for about 3 minutes; because we are using whole eggs, it’s important to break the egg white completely so the texture will be smooth.

6.Using a strainer, strain the mixture gently to another bowl. We can see some undissolved eggs. Straining can help attain a smooth and silky texture, and straining the mixture gently can remove the bubbles.

7.Measure 1 cup per Llanera and gently pour the mixture. The excess can be divided equally. This one yields 5 Llanera.

8.Cover the Llanera with foil. This is done to avoid water from entering inside thus affecting the texture of the flan.

9.Turn on the heat to low setting and arrange the Llanera in the steamer. Our steamer is small so 3 Llanera on the bottom layer and 2 on the top layer.

10.Steam for about 50 minutes. Turn off the heat and don’t remove the Llanera yet, let it rest inside for about 10 minutes. Cool down at room temp for about an hour. Chill. It’s ready to be served after being chilled.

Now, we have this delicious Leche Flan made with love. My mother used to enjoy eating this very much but now, I can't make it anymore for her. 💖

You can also make it thicker by adding more mixture per Llanera. A tub container can also be used for selling or for giving.

It looks attractive even though it looks simple. The golden and shiny top looks inviting. Caramelizing the sugar properly is important to achieve this golden caramel top without a hint of something burnt. It does not only melt in your mouth but it melts your heart as well… 😊

Do you add water on the sugar before melting it? Mine didn't melt before, so i added some water in it. 😅

Hello... No, I didn't add water anymore, just a tablespoon of white sugar per pan. As it slowly melts, I also gently swirl the pan so all sugar will be completely melted. I also saw others they just make the syrup by combining sugar and water in saucepan and when it changes to golden color, they distribute the syrup per pan. I also failed first few tries in making the syrup coz it needs proper timing.

I like using whole eggs, too, it's the way you cook them. It doesn't matter if you use whole or yolk only, and as you say, it is personal preference, and I don't know where to use the white part LOL.

Hello... That's right, you'll end up with a lot of egg white if you only use the yolk for the flan heheh
If we have extra egg white, we just fry it until it's brown heheh..so nothing is wasted.
