It is my first post in this awesome community @foodiesbeehive. Thank you for giving me opportunity to share my Chocolate Cake recipe. It is Friday today and we need to generate more sales for our mini business just within the neighborhood. So, last night I made chocolate cake that we can sell today because it is weekend. We noticed that more people buy some goodies when it is weekend. I and my partner are planning to go out tonight so I hope we can sell some goodies in the afternoon before relaxing a bit tonight.
I am sure many of you have already your own tested recipes for this but for chocolate cakes, I noticed that there isn't much difference with the ingredients except for the measurement and quality of the cocoa powder. I guess that's where the outcome varies. Well, in the end, it is still a personal preference on how sweet or how chocolatey you want it to be. Anyway highway, let's do it now and let's do it right.
The Cast of Characters, err...I mean the Ingredients: 😄
1 cup buttermilk
2 large eggs or 3 medium eggs
1/2 cup oil
2 cups white sugar
(Note: You can adjust this to 1 and 3/4 cup)
1 cup hot coffee
2 tsp vanilla
1 tablespoon Mocha flavorade (optional)
2 and 1/2 cups All-Purpose flour
1 cup unsweetened cocoa powder
1/2 tablespoon baking powder
1/2 tablespoon baking soda
1/2 teaspoon salt
Now, Let’s proceed to the Procedure:
1.I don’t have buttermilk, so I prepared the buttermilk substitute: 1 cup Evap or Whole Milk, add 1 tablespoon white vinegar. I waited for 20 minutes before using. Meanwhile…
2.I sifted all together All-Purpose flour, cocoa powder, baking powder and baking soda in a clean bowl. Sifting the dry ingredients makes it easier to combine with the wet ingredients.
3.In a separate bowl, I mixed together the buttermilk, eggs, oil, salt, vanilla, and mocha flavoring. I still have extra mocha flavoring that might expire so I added it for more flavor (and so it won’t be wasted).
4.I added the hot coffee to the wet mixture and mix thoroughly. I just used coffee powder and added hot water.
5.Then I added the dry ingredients to the wet ingredients and mixed well.
(Let them relax a bit and mingle with each other😀)
6.Preheat the oven at 160 degrees C for 15 minutes.
7.Divide the mixture equally into each pan. I used 4 pans, roughly about 1 and 1/2 cup of the mixture per pan. You can use one big pan if you prefer.
(The spatula turned from blue to yellow coz I accidentally dropped the blue one.)
8.Bake for 40-45 minutes. Be sure not to overbake to maintain its soft texture…
(I made this mistake several times before.)
9.Let this cool. If you want, you can already enjoy this with your loved ones.
For more chocolatey taste, let’s make Chocolate Sauce:
1 can Evap milk or whole milk (about 375ml)
1 cup white sugar
(I sometimes use brown sugar)
1/2 cup unsweetened cocoa powder
1/4 cup water
1 teaspoon vanilla
3 large egg yolks
3-4 tablespoon cornstarch
(depending on how sticky you want it to be)
1/2 teaspoon salt
1.Add milk to the eggyolk then strain. Mix all the ingredients above in a bowl then transfer in a sauce pan. Keep stirring until it gets a bit sticky. When it already comes together, add in 2 tablespoon butter.
2.Turn off the heat. Stir for about a minute. Transfer this to a bowl. I let it cool down and chilled for about 30 minutes before topping on the cake.
We will be selling this later on so I just cut the loaf into 2 portions. I topped it with the chocolate sauce I made earlier. I also sprinkled some chocolate chips on top. The price of cocoa products has increased tremendously in the past months. So, chocolate cakes are more expensive nowadays. But we still try to price our goodies reasonably.
