This week's #qurator Qurator's Hive Top Chef Competition topic is Quick and Easy. As I considered the topic, noodles, sunny side up, and reheating canned goods crossed my mind. What else can be prepared quickly and easily aside from these foods?
When I visited our local market this early morning, I came across this anchovy in one of the market stalls, and it still looked fresh and intact. Anchovies, or locally known as Bolinao, are tiny fish that go in groups when they are caught. It is usually made into kinilaw or eaten raw with cucumber and tomatoes, vinegar, and spices. So I bought one-fourth kilogram of it, bought some leafies and eggs, and went home.

Then I came up with a recipe that is not only quick and easy but also healthy, and I knew that kids would surely love it.
RECIPE: QUICK AND EASY, HEALTHY, SAVORY SEA AND GARDEN OMELET
Ingredients:
1/4 kilogram of anchovies/Bolinao
2 large eggs
2 Chinese cabbage leaves
5 cloves of garlic
1 small bulb of onion
1 tomato ripe
a pinch of ground black pepper
a dash of salt
a dash of instant seasoning (optional)
2 tablespoons of cooking oil for frying

Quick and Easy Preparation:
In a large bowl, put all the ingredients: cleaned and drained anchovies, chopped garlic and onions, diced tomatoes, thin strips of Chinese Cabbage, a dash of ground black pepper, and the two large eggs.
Mix all the ingredients thoroughly, add a dash of salt or some instant seasoning if you like. Set aside.

In a medium fire, heat 2 tablespoons of cooking oil in a pan. Pour the mixture into the pan when the cooking oil is already well-heated.

When the downside is done, flip the other side of the omelet.

Once the omelet is done and the outer sides have this crisp texture, drain the oil and transfer immediately to the serving plate.
My omelet is a bit deformed during flipping.
I then sliced a pie from my Savory Sea and Garden Omelet, and had some pickled cucumbers as a side dish. Trust me, it is so good. Even the kids love it. They never noticed the cabbage and other spices, they only detected the savory fish and egg in the omelet. A good try for mothers having picky eaters.
The texture is delightful.

Nutrition Facts:
This omelet is rich in protein and healthy fats, with moderate carbohydrates coming from the vegetables. It is rich in Vitamin A and C and provides a good amount of calcium and iron and a higher level of sodium coming from the anchovies. Overall, it is nutrient-dense and filling, with a strong Umami flavor.
