I was craving for food that will keep me fuller till evening because I am on a weight loss journey so I do intermittent fasting from 6 am till 11am but I take carrot and cucumber infused water to stay hydrated. I thought of making vegetable.sauce with egg and rice. After eating my delicious and nutritious dish, I feel satisfied it can carry me till evening. This vegetable sauce taste so good with the little spices I have at hand at the moment. The ingredients used in making this delicious meal is:
Pumpkin Leaves 🌿 3 handfuls
Onions 1 bulb 🧅
Salt ½ teaspoon🧂
Thyme ½tsp
Ground Pepper 1 tsp
Olive Oil 1 tbs
Cabbage 50g
Garlic 🧄 2 cloves
Ginger thumb size
Curry Powder ½ tsp
2 Eggs
The recipe👇🏾
First, wash the ingredients, slice the onions in ring form, chop the cabbage, pumpkin Leaves, grind the garlic🧄 and ginger which I used my mortar and pestle to do and keep them aside.
In a pan heated up but not too hot (medium heat), put the oil first, then the onions and start sautéing after about 2 minutes, you will add the ground ginger , garic, curry powder and continue sautéing, for about 2-3 minutes. Afterthat, add the other ingredients one after the other as you sauté. You will do this for 5minutes till the onions is caramelized so as to bring out more flavor.
Now add the cabbage and continue sautéing till almost done (so as not to cook away the whole nutrients).
Now add the pumpkin leaves. At this point you won't cook it for long just 5 minutes , you're done.
When ready, you can enjoy it with Rice🍚 and boiled eggs or meat. Hmmmmm yummy😋.
