Well, I had some guests over and I didn't really have anything to do, so I got creative. I decided to make an eggplant dip out of whatever I had in the fridge, so join me.

Wash the vegetables, cut the eggplant in half, and add oil and salt. Each vegetable is baked in the oven for 45 minutes.

While We bake the vegetables. In a bowl, add 1/2 cup of water, a pinch of salt, and the flour. If it's too hard, add a little water. The idea is to make the dough soft. We make small balls and shape them into small arepas. We add them to a hot pan until the arepas are golden brown on both sides.

A Once all the vegetables are baked, remove the eggplant pulp, peel the garlic, chop the onion, and a sprig of parsley. Place it in a blender or food processor. Add oil, vinegar, salt, and pepper, and process until smooth.

looks very delicious

Haha it's delicious, I invite you to try it!!

The recipe needs time to do it but the result is so satisfying.

Well, the time depends on the oven. I use a small electric oven, which is perhaps why the process is slower. But as you say, the result is delicious... With a normal oven, it doesn't have to take that long.
