Instructions
1- Preparation:
- Pat the chuck roast dry with paper towels.
- In a small bowl, mix the Italian seasoning packet, oregano, basil, paprika, onion powder, garlic powder, sea salt, and pepper.
- Rub this seasoning mixture all over the chuck roast.
2- Searing the Beef:
- Heat olive oil in a large pan over medium-high heat.
- Add the seasoned chuck roast and sear on all sides until a rich, brown crust forms, about 3-4 minutes per side.
3- Braising the Beef:
- Add chopped onions, red and green peppers, chopped garlic, and the beef bouillon cube to the pan.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pan, and let the beef braise for 2 ½ hours or until fork-tender. If you have a larger piece of meat, adjust the cooking time accordingly.
4- Optional Spice:
- If using Scotch bonnet pepper or Pepperonchinis, add these to the pan during the last 30 minutes of cooking.
5- Melting the Cheese:
- In another pan, melt butter over medium heat.
- Add flour tortillas one at a time, sprinkle with mozzarella and Parmesan mixture (or Provolone) and heat until the cheese is melted and the tortilla is lightly toasted.
6- Assembling the Tacos:
- Shred the braised beef using two forks.
- Fill each tortilla with a generous helping of beef, some of the pepper mixture, and a sprinkle of fresh cilantro.
7- Serve:
- Serve the tacos hot, ensuring that the cheese is melted and gooey. Enjoy these flavorful, juicy Italian Beef Tacos with friends and family!
