I still remember the way my favourite shop used to make chicken egg roll The smell the sound the taste everything about it was just amazing It was like a small magic happening in front of me every time
I order Let me tell you how they used to make it step by step just like how I saw them do it so many times
Whenever I go to the shop I always see a big container on the counter Inside this container there were many small round balls of maida dough They call it lohiya I once ask the uncle who makes the rolls and he tell me that loye means the dough after mixing maida with water After mixing properly they make small pieces and keep them ready for making rolls It always make me curious how such simple thing can turn into something so tasty
When someone place a order the uncle take one piece of that dough and start rolling it He use a belan which is like a wooden rolling stick He press and roll the dough until it become a perfect round roti Then he heat the tawa a little put some oil on it and place the rolled dough on it The sizzling sound of oil hitting the tawa always made my mouth water
As the roti cook it start changing color Slowly it become crunchy and crispy The uncle know exactly when to flip and when to press it to make sure it cook properly Once he happy with the roti he move it to side of the tawa Then he take eggs depend on how many you order crack them and mix them with some masala Then he spread this egg mixture on the tawa making sure it cover a good area The smell of egg cooking with masala was so nice that I feel hungry even if I just ate
When the egg is slightly cooked he quickly put the roti back on top of it He press it gently so that the egg sticks properly to the roti This step was my favourite to watch because it always felt like magic The way the egg and roti become one single thing it was just amazing
After this step he take the egg roti from the tawa and put it on the counter Now come the best part – the chicken He already have some prepared chicken kept in a big tray He take a good amount of that chicken and spread it evenly on the roti The chicken was always juicy and full of flavor I never knew what masala he put in it but it was always perfect
Then come the final touch He add some chopped onions maybe some coriander and then different sauces I never really knew what sauces he used but they were so good The mix of all these flavors made the roll taste like heaven It was a perfect balance of spicy tangy and a little sweet Sometimes I try to guess what sauces he used but I could never get it right
Once everything is inside he roll it tightly wrap it in paper and hand it to me The moment I hold the roll in my hand I feel like I already start eating it in my mind The warm feeling of the roll in my hand the smell of the sauces and chicken it was just pure happiness
I take my first bite and oh my god The crispy outside the soft egg the juicy chicken the flavorful sauces – it all mix together and create something magical in my mouth I always used to think how can such simple ingredients turn into something so delicious But then I realize it was not just about the ingredients it was about how they made it with so much care and experience
Every time I eat that roll I feel like I never want it to end Even if I feel full I still want one more bite The taste stay in my mouth even after I finish it making me want to come back again and again
I don’t know if I can find that exact same taste anywhere else Maybe it was the way the uncle made it maybe it was the sauces or maybe it was just the memories attached to it But one thing I know for sure – that chicken egg roll will always be special for me And every time I think about it I can almost taste it again in my mind
That shop was not just a place to eat it was a place where happiness was served in the form of a roll And I will always remember it not just for the food but for the experience the smell the sounds and the joy it brought me
