Hello! How is everyone?
Just had a couple of things to tend to and took my time to rest as my sleeping time has been inconsistent for the past weeks.
While it's a tradition for people to go out visit churches or spend the holiday on a beach with the family during Holy Week, yours truly is spending the holiday at home. First, the hellish temperature makes my head ache. Second, my family's tradition during Holy Week was only to stay home so we don't give much importance going to churches nor going on vacations.
However, we follow the tradition of abstinence from meat. My mama would usually fry fish and bilo-bilo (sticky rice balls in coconut milk). Now that it's my turn to decide what to cook, I've came up with some foods that are suitable for Holy Week:
♡ TOFU & MUSHROOM SPRING ROLL

Lumpia or Spring Roll is commonly known to have pork or chicken as its meat. If you love lumpia, don't worry because you can still indulge in this fried, golden, and crunchy food during Lenten season. One alternative for a meatless lumpia is the Tofu & Mushroom Lumpia.
Honestly, it's just as good as the lumpia with pork or chicken. The crunchiness of the spring roll wrapper and dipping it on ketchup can trick the mind that you're eating meat.
It's also very easy to make. Just replace the meat ingredient with tofu and mushroom! And it's cheaper as well.
♡ FRIED MILK FISH

One of the easiest food to prepare is the fried milk fish or "pritong bangus". There are pre-marinated milk fish in the market but you can also definitely make your own marinade. Just add salt, pepper, vinegar, and crushed garlic at least an hour before frying.
In my case, I used soy sauce instead of vinegar because I thought soy sauce was the ingredient for the marinade. I know the right ingredient now and will use vinegar next time. Lol. The taste is still good anyway with soy sauce.
♡ CHEESY SPINACH & TOMATO OMELETTE

One of my usual and favorite breakfast food is omelette. I like adding cheese, spinach, and tomato on my omelette. Then I switch to mushrooms when I run out of spinach and tomato. I read that it's alright to consume eggs during Lenten season so omelette is okay.
I also pair my omelette with some cucumber slices and two bananas. Bananas get ripe quickly so I have to consume them all before it gets rotten.
♡ MISO SOUP

Of course, with all the fried foods on my list, it is best to pair them with a soup. The soup I chose to make is the Miso Soup. Yup, the kind of Japanese soup we usually see on food vlogs. I just happen to see a miso paste at the grocery so I toook it as a sign to finally try making it.
The Miso Soup has few ingredients that's why it's not that difficult to make. It's easy to prepare with lots of claims that it's a very healthy soup. The paste is composed of fermented soybeans and other spices. In addition, the taste is unconventional for my Filipino palate. It's light and not as savory as the Filipino soup dishes but it's not that bad either.
♡ ORANGE & MANGO PUDDING with CHIA SEEDS

This pudding dessert has been on my mind for weeks now and finally I was able to make it for this holiday. I've been making jelly cakes that's why adding fruits to gelatin has always been on my bucketlist.
A bit a failed experiment but it still turned out good especially when I added chia seeds on top. Eating this dessert felt like I'm finally keeping myself healthy. I also used oat milk for this dessert.
♡ AVOCADO with CONDENSED MILK


It's almost avocado season here in the Philippines and the avocados on the grocery tempted me to get some. I actually planned a different dessert recipe but one of the avocados was half rotten so I switched to a different recipe on the spot. Good thing I checked the avocados first before preparing the ingredients for the first recipe I had in mind.
Anyway, the classic avocado with condensed milk never fails! It's good as avocados are healthy and the condensed milk satisfies the sweet tooth.

There are a couple more Lenten season-friendly foods that I could've shared here but unfortunately, I still haven't cooked them. I'll still share them on the next coming weeks, so look out for it. :)
