Kale and Zucchini Stir Fry

Hi There!

It's so humid today and it is only 8.39 AM. I am wearing mini skirt and tshirt only, and I am boiling hot in the car! 😅 There is breeze tho, but yeah, it's only a tad nice, that's it. Gonna be a hot day hopefully! My phone notification often says, expecting rain, rain will end soon, etc, but nothing of some sorts in reality. Back in Winter as well, snow will fall, snow will end, but nope. It is set to my city zone, so I don't know how it can be so wrong 🤣 Rain would be nice though, as there are bush fires everywhere throughout BC, already. Overwintering fires in fact.

For today's dish, it's one of my boys favorite. Great as is for my husband, superb with warm rice for the rest of us. Yep. We do consume a lot of rice in this house as our daily meals 😁

2 zucchini
2 chayotte
1 bag of kale
1.3 kg lean ground beef
1 large sweet onion, slice thinly
4 garlic, slice thinly
1/4 c water
Chicken bouillon powder, to taste
1/2 c crushed parsley
Ground cumin, to taste
Garlic powder, to tase
Sesame oil, to taste
White pepper powder, to taste

Peel the skin off chayote and slice them thinly. Leave the skin of the zucchini intact, slice them thinly as well. As for the kale, remove the stalks, and slice or cut them into smaller size.

Brown the beef until no longer juicy, then stir in sliced garlic and onion, cook for 2 mins, until softened. If needed, add in water.

Give veggies a quick rinse, then drop them into the pot, stir and cook for 5 mins on low-medium heat

Season dish and continue cooking on low medium heat for another 5-8 mins

Serve immediately and enjoy 😁

Daily rice consumption is a normal Asian thing though right XD We ate it almost daily growing up (and again almost daily when we visit for holidays). I thought I was sick of rice and would be happy not eating it so much when I moved away but I miss eating it so often but I don't know if that's nutritional requirements or nostalgia going on XD

I prefer noodle (not pasta). Like yes, rice is yhe norm, but i believe i can live without rice, however i dont think i can live without noodle dish 🤣

I thought the same til I started living without rice XD

True though noodles are a necessity ;D
