This is a very nutritious and tasty dish to enjoy if you eat plant-based dishes and, like I, adore them!
Ingredients: 0.5kg frozen green beans (or fresh), 1 cup of borlotti frozen beans, 2 potatoes in small pieces, 2 carrots in slices, 10 cherry tomatoes, ½ cup of chopped parsley, 1 vegetables cube, 1 chopped onion, 250ml handmade tomato sauce, ½ chili pepper chopped, 1 small cup of olive oil. Optionally, salt
You chop your potatoes, carrots, onion, parsley and cherry tomatoes. In a pressure cooker sauté the olive oil and the chopped onion in medium fire. Gradually add the potatoes, the carrots, the green beans and the borlotti beans while tossing.
Add the tomato sauce. Add the cherry tomatoes and the parsley. In the end, add hot water in which you have dissolved the vegetables’ cube. The water should nearly cover the food. Add the chili pepper and close the pressure cooker. Let your food simmer for 30 min.
This casserole can be eaten with a nice warm bread, olives, or a nice cheese.
