Well this is a very easy recipe and can be combined with a nice cheese or yogurt. Voila!
Ingredients: 3tbsp of olive oil, about ½ cabbage cut in big pieces (about 3 cups), 4 spring onions cut in small slices, 1tbsp of dill finely chopped, ½ bunch of parsley finely chopped, ½ red pepper sliced, 2 tomatoes cut in small pieces, 1tbsp of tomato paste, 2 carrots finely sliced, 1 lemon zest, 1 lemon juice (optional), 1 cup of rice, 3 cups of vegetables broth, salt and pepper
You first cut all your vegetables. In a deep pot, saute the dill, spring onions, parsley and red pepper in the olive oil. Add the carrots and the cabbage and let them wither. Add the tomato paste and the tomatoes. Then add the broth and let them simmer for 10’. Add the rice, salt and pepper, and let it cook for as long as it is ready (normally you’d need 20’ – it took me more than 1/2hr).
Throughout the process check that your food is juicy or else add some water. I added about 2 extra cups of water. Also, stir your food throughout the cooking process. In the end, add the lemon juice and the lemon zest. This is totally optional and will add sourness to your food, so it is totally up to you!
