A Quick Fruit Smoothie for Lunch : Fruits and Veggies Monday

After breakfast this morning, I wanted soemething cool and light for lunch. I decided on a smoothie as a quick fix. I love strawberries, so this was my chance to utilize them since they'd been in the refrigerator for a while.


You can use any fruits and veggies you have handy. My ingredients today for this strawberry smoothie are the items I already had in the refrigerator:

  • strawberries (5)
  • peaches (1/4 cup)
  • cantaloupe (5 slices)
  • carrots (1/4 cup)
  • sour cream (2 tblsp)
  • organic milk (1/2 cup)
  • ice cubes (2 cups)
  • nuts (1/4 cup)
  • sweetener

Next, I placed the ice and milk in the blender. You can use less if you want your smoothie a bit thicker.

Then I diced the fruits and veggies and added them in.

Third, I added the sour cream and nuts; then blended on low speed.

Blend for about 2 - 4 minutes. Then check to see if you need to add any additional fruit or veggies, according to how thick you want it. Add additional sweetener if desired.

Voila, a perfect lunch to drink that's full of fruits, veggies, and nuts that's cool and satisfying.

Although it all looks very delicious, this contest forbid all animal products and milk is an animal product. Vegan means no eggs, no dairy, seafood and obviously no meat. OK. Thanks for clarifying the requirements. I'll remove this tag from my posts for this type of foods and drinks I prepare that's not vegan.

Happens all the time when people are just starting to join the contest. There are a lot of good non-dairy subs, but otherwise looks delicious! Hope to see you join again soon! :)

Hi @plantstoplants Thanks for your kind words. I will definitely be more careful next time for the different food contests with the different requirements.

The second time I prepared it, I added 2 bananas to thicken it more. It was delicious. I'm lactose intolerant, so I use organic milk.

No worries! With so many awesome contests on here it's easy to miss. Oh boy, bananas do really make for a creamy and delicious smoothie! A few of the other ladies joining this week made homemade coconut yogurt, so I can't wait to try that myself and add some to a smoothie, too!
