Greetings Hive
Soft chewy cookies with slightly crunchy edges, stuffed full of white chocolate. Very decadent yet still light.
These weren't very pretty, but Mini (as we like to call her) wanted purple cookies. I also had white chocolate chips just laying around in the back of the kitchen cupboard after some birthday cake decorating madness. Here's the very easy, quick and air fryer friendly recipe.
Recipe & Method
Ingredients
- 1/2 Cup Butter
- 1 Cup Sugar
- 2 Teaspoons Vanilla Extract
- 1 Large Egg
- 1 1/2 Cups Flour
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1/4 Teaspoon Salt
- 1 Cup White Chocolate Chips
- Purple Food Colouring (I had to use blue and red as I had no purple available at the time)
Method
Mix together Flour, baking soda and powder, salt. Set side.
Mix butter and sugar, using electric mixer.
Add egg and beat till light and fluffy.
Mix in dry ingredients the add chocolate chips and mix well.
Plop about 1 tablespoon full little blobs on a lined air fryer basket (or baking tray if using an oven)
Bake at 150C/300F till just barely starting to brown, they will be very soft until cooled.
Let sit for 5 minutes before transferring to cooling rack. Allow to cool completely before serving.
I could not keep her away from these long enough to take a photo without her little hand in them. So cute.
