I bring to you my secret recipe for preparing boiled Plantain with Egg Sauce.
My love for plantain makes me to explore different ways with which it could be prepared. One of the ways is boiling and eating it with any sauce of your choice.
There are different kinds of sauce that could be eaten with the boiled plantain ranging from native sauce, stew sauce, egg sauce, fresh fish sauce, amongst others.
The plantain could either be ripe or unripe. The choice is all yours 😋😉. For me I love both ripe and unripe plantain.
INGREDIENTS
~ Ripe and unripe plantain
~ Fresh tomatoes
~ Groundnut oil
~ Onions
~ Garlic
~ Ginger
~ Maggi
~ Salt
~ Eggs
MY RECIPE
• I peeled off the green and yellow membrane covering the plantain.
Since I made use of both ripe and unripe plantain,I had to cut it into different sides in the tray in my desired shape.
•I first of all boil the unripe plantain for about 13 minutes before I added the ripe plantain and boiled for 12 more minutes. While it was boiling I added 2 tablespoons of salt to it.
When I achieved my desired level of softness,I drained out the water and kept it aside.
• While I was boiling the plantain, I started preparing the ingredients for my egg sauce.
I broke the three eggs into a plate and whisked it until it was foamy. I added a pinch of salt, pepper, and onions to it.
• I chopped my onions and fresh tomatoes. I grated my garlic and ginger.
• I placed the frying pan on the gas cooker for the water inside to dry off.
I poured the groundnut oil into it and allowed it to heat up.
• I added onions, garlic, ginger and then stir for few seconds.
I added the chopped fresh tomatoes and fresh pepper and fried for 5 minutes. I also added salt to it.
• I poured in the whisked egg and friend for 2 minutes, I stirred it and brought it down from the heat.

Our scrumptious boiled Plantain with Egg Sauce is ready for consumption.
N/B : I ate the meal with water but you can step yours down with a chilled soft drink or fruit juice 🥤
