I must know what you're planning to do with all those scallions! I love following your homesteading adventures and I am looking forward for my container garden to get started again!

I think we will be drying and freeze drying a lot of them, but it is a bit more than I expected so we are going to have to figure out what all to do with them.
That's a good point. What about mincing, then spreading it out to freeze dry? Would that save on space?
Yeah we will have to chop them down to fit the trays for the freeze dryer. With so many we may blend some down to liquid then freeze dry to get powder.
