Raw vegan mint choc chip balls RECIPE

This recipe was inspired by finding some mountain mint on my walk in nature

  • mint chocolate raw vegan power balls*
    2 cups dates pitted
    2 cups walnuts
    2 tablespoons of cacao / cocoa powder
    2 tablespoons of Carob powder (replace this with 2 more of the above if you don’t have)
    4 drops of mint essential oil (Add to taste but it’s strong so only do a drop at a time! )
    4 small sprigs of mint ( take the leaves off and throw away stalk)
    I used two fresh mint and two mountain mint.
    10 squares of dark chocolate I used 90 percent raw vegan chocolate but cacao nibs would also be great if you have them in.

Blend together all ingredients except for dark chocolate till a consistency that sticks together and then add the dark choc / nibs and pulse quickly... roll into small balls

This is the mint i found, I took a bit back to grow my own :)

That looks like a really nice snack. I like chocolate 🍫 But I want to ask... do you not need to put it in the fridge at one point during the process? Maybe after everything is blended before/after the dark choc comes in?

I tend to store mine in the fridge as i just like them cold but they don't need to set in the fridge as long as they are kept cool they are actually fine.
