Welcome to another blog post of my An Apple Eats blog series.
I have been busy with stuff so I couldn't keep track of my meals lately. But this week until early February, I have some spare time or more likely no scheduled activities so I will be able to note down some meal prep that I plan to do.
Yesterday, I was able to cook up a little bit that I thought would last for a few days.
Menu:
- Brown rice with furikake
- Sautéed meat and veggies
- Baked eggs and veggies
- English muffins
Recipes
Sautéed Meat and Veggies
- 2 small potatoes diced
- half a large carrot diced
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 3 tbsp honey
- half cup water
- 2 cloves garlic thinly sliced
- 500g pork
- Start by pan frying the pork until a little bit brown.
- Add in the the garlic until it's fragrant. Make sure to stir occasionally.
- Add all remaining ingredients, cook and simmer until liquid thickens, creamy like consistency.
Baked Eggs & Veggies
- 6 eggs
- 1 cup of corn, carrots, and green peas mix (can be bought from the grocery)
- salt and pepper to taste
- Preheat oven to 180c degrees
- Scramble eggs in a bowl and season with salt and pepper according to liking.
- In a wide baking pan, brush some cooking oil and pour the eggs.
- Scatter the corn, carrots, and green peas mix.
- Bake for 15mins.
English Muffins
- 300g bread flour
- 120g water
- 1g salt
- 1 packet instant yeast (3g)
- 15g sugar
- 20g butter
- 1 egg
- cornmeal for dusting
- Mix all ingredients in a bowl except for cornmeal. If using a mixer, let it knead for 5 mins med-high. If kneading by hand, knead until smooth.
- Store and cover in a large bowl. Let it rise in a warm place until double in size.
- Punch the dough lightly to de-gas.
- Divide into 12 small doughs and form into a small ball.
- Roll each dough into the cornmeal, cover the whole dough ball.
- Flatten the dough and let rise again until double in size.
- Preheat a frying pan (must be flat and no oil needed).
- Cook each dough in the pan for 5-6mins until golden brown. Place some baking paper on top of the dough and then place something heavy on top to flatten the dough a bit, heavy plate or other utensils will do, make sure it's heat resistant. You may cook as many as you pan can accommodate.
- Remove the plate and flip the dough and cook for another 3-5mins until golden brown. No need to put a plate anymore for the other side.
Thought it would last long but that night I ate almost half of the meat dish 😆 It only lasted until the next day. Eggs and rice until day 2. Only english muffins left 😆
