It’s my first time cooking this dish, and I just did the simple procedures which is easy to follow. So, here... I’ll share it to you.
𝐏𝐚𝐭𝐚 𝐓𝐢𝐦: 𝑂𝑛𝑒 𝑜𝑓 𝑡ℎ𝑒 𝑚𝑜𝑠𝑡 𝑓𝑎𝑚𝑜𝑢𝑠 𝐹𝑖𝑙𝑖𝑝𝑖𝑛𝑜 𝐷𝑖𝑠ℎ. 𝐴 𝑏𝑟𝑎𝑖𝑠𝑒𝑑 𝑐𝑜𝑜𝑘𝑖𝑛𝑔 𝑑𝑖𝑠ℎ, 𝑎𝑛𝑑 𝑐𝑜𝑜𝑘𝑒𝑑 𝑖𝑛 𝑠𝑙𝑜𝑤 𝑓𝑖𝑟𝑒 𝑢𝑛𝑡𝑖𝑙 𝑖𝑡 𝑏𝑒𝑐𝑜𝑚𝑒𝑠 𝑡𝑒𝑛𝑑𝑒𝑟... 𝑣𝑒𝑟𝑦 𝑡𝑒𝑛𝑑𝑒𝑟.
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒 𝐍𝐄𝐄𝐃𝐄𝐃:
- 1 Piece Whole Pork Leg
- ½ cup of soy sauce
- 3 cans of pineapple juice
- Black pepper (paminta)
- Garlic
- Onion
- Ginger
- Bay leaves/Laurel
- Lemon grass
- 2 teaspoon of sugar
- oil
𝐏𝐑𝐎𝐂𝐄𝐃𝐔𝐑𝐄𝐒:
• Wash the chopped pork leg until it is clean. To ensure that it’s more clean, you should boil the pork for 30 minutes.
•Add black pepper in boiling the pork to lessen its raw smell.
•Set aside the pork after boiling and prepare the other ingredients.
•Chop the 3 condiments (garlic, ginger, and onion)
•Saute the ginger, garlic, and onion, together with the boiled pork.
•If the condiments are already sauted, add the boiled pork immediately. Saute them together until the pork is brown.
•Add more black pepper
•Add all the remaining ingredients:
2 table spoon sugar, laurel, ½ cup of sauce, lemon grass, and the 3 pieces of pineapple juice.
•Lemon grass can add citrusy flavor in dishes like adobo, tinola and like this pata tim recipe.
•Also add some water to soften the meat. Simmer it until the meat is soft. Slow cook until it’s very tender.
Add some water again if the meat is not soft as what you wanted.
Wait until the meat absorb the water, remember to slow cook until it’s very tender.
You can also adjust and put some condiments until you’ll be contented by its taste. But for me, those ingredients mentioned above are enough for having this delicious pata tim!
𝑊𝑖𝑡ℎ 𝑡𝑎𝑠𝑡𝑖𝑒𝑟 𝑎𝑛𝑑 𝑗𝑢𝑖𝑐𝑒𝑟 𝑠𝑎𝑢𝑐𝑒! 𝑂𝑓 𝑐𝑜𝑢𝑟𝑠𝑒 𝑦𝑢𝑚𝑚𝑦 𝑎𝑛𝑑 𝑑𝑒𝑙𝑖𝑐𝑖𝑜𝑢𝑠 𝑑𝑖𝑠ℎ!
Note: The maximum time for cooking this dish is mostly 3 hours to soften the meat. It’s not easy to wait but... it’ll be worth it for this yummy, delicious, juicier, and tastier dish. You must try it!
