It's been a long time I posted here due to my health challenge. My kids have been craving for pancakes though I used to make it for them when they were in their pre-teens. Today, they came up with the idea of making pancakes for their lunch. I did oblige to their request knowing how much they like and enjoy eating pancakes. I am thrilled to share my recipe for you.
Let's get started.
INGREDIENTS
2 Cups of flour
2 Eggs
2Pieces of fresh peppers
1 Tablespoon of ground pepper
5g of salt
5g of ginger
5g of nutmeg
2Tablepoon of sugar
1 bulb of onions
40ml of vegetable oil.
EQUIPMENT USED.
Mixing bowl, Frying pan, Whisk, Cooking spoon, Serving plate, Knife and Flipper spoon.
STEP 1. MIXING THE BATTER
Add 1 cup of warm water , then add all the ingredients except the flour and mix thoroughly with your Whisk.
Afterwards, pour the flour as you stir gradually till it mix thoroughly.
STEP 2. PREPARING THE PAN
*Heat the pan for 2-3 minutes If you are cooking on medium heat like me.
*Grease the pan with a little oil, for 2-3 minutes. I used vegetable oil . You can use any oil of you choice.
STEP 3. COOKING TIME
Pour I scoop of batter with your cooking spoon into your pan and allow it to cook for 2-3 minutes till golden brown , then flip the pancake underside and allow it to cook for another 2-3 minutes till it's fully done. Bring it out and repeat the process till your batter finished.
Note: Your actual cooking time may vary depending on the quantity of your flour. Mine lasted for 30 minutes. The serving is for 4 people.

You can serve it with toppings, syrup, or fruits. My kids enjoyed theirs with yogurt. It's fluffy, tender, spicy and flavourful and It tastes so nice.
