Pop one of these homemade Marshmallows into your mouth, close your eyes, sink your teeth into a fluffy pillow of sweet delight covered in a coating of toasted Coconut, and savour the moment as they melt away in the blink of an eye;)

I can assure you that once you've tasted homemade Marshmallows, store-bought will never be good enough again.

Most Marshmallow recipes online are way too complex for me. They involve boiling a sugar syrup to just the right temperature, or until it reaches the firm ball stage; not stirring during cooking otherwise, the syrup can crystallize.

I will try the 'proper' method one day, but those who know my cooking style will know by now that my go-to recipes are quick and easy without compromising the dish in any way! Hence, I started collecting no-fuss, easy but delicious recipes soon after I married back in the 70s, a long time ago indeed!

The kitchen's always been my happy place. I loved helping my Ouma and Mom Lily before I could even read, but I was merely helping, not doing the actual cooking! Fortunately, hubby was just as kind as my Dad, and always thanked me for a delicious dinner, even when I knew it was awful;)

Along came Ella, the new secretary in the office of land surveyors where I worked as a learner draughtswoman. She was much older than me, a super-organised secretary who also excelled at cooking and baking! Her family were avid caravanners, so most weekends saw them going down the coast to a resort where their caravan was permanently parked. Naturally, being a camper, Ella was a no-fuss cook and baker. She was also generous, bringing teatime treats into the office and sharing her fuss-free recipes with me.

The heavenly, super-easy melt-in-the-mouth Marshmallows I'm sharing with you today is one of Ella's recipes. I often made them for my sons but had to hide it from hubby, who was diabetic from childhood days. He, however, could indulge if he was having a sugar low.

The mixture is perfect for making party treats. My sons used to join me for marshmallow fun; I pretended not to see them sneaking teaspoonsful when my back was turned.
I would pipe it into an ice cream cone, and the boys would sprinkle them with 100s & 1000s or chocolate vermicelli, or we'd pipe the marshmallow mixture into edible cookie cups, seal them with a Marie biscuit, and decorate them as hats.
I'm sure if I had no 'helpers', there would have been many more Marshmallow ice cream cones and hats;) But it was fun!
If the mixture starts to set, one simply places it over a bowl of hot water and beats it a little.
Marshmallows, of course, also can be toasted on the braai (BBQ), and the homemade ones are absolutely scrumptious when toasted!

I did not have all the paraphernalia to make hats and cones this time, so I only made square Marshmallows dipped in lightly toasted fine Coconut.

Ella's No-Cook Marshmallows

Simple ingredients required:
20250405_164858.jpg

  • 40ml (20g) Gelatine
  • 60ml Cold Water
  • 200ml boiling Water
  • 500ml Castor Sugar
  • 2ml Salt
  • 5ml Vanilla Essence
  • 1 Egg White
  • Approx 125ml fine desiccated Coconut

Lightly toast coconut in 170°C oven, stirring from time to time to ensure it doesn't burn
20250405_171339.jpg

Bloom gelatine in the cold water

20250405_165511.jpg

Place sugar, salt, Vanilla, and the egg white into a large mixing bowl
Pour boiling water over bloomed gelatine, mix lightly, pour over sugar mixture
20250405_170103-EDIT.jpg

Beat for 15-20 Minutes in an electric mixer on high - the mixture will thicken and greatly increase in volume

20250405_171024.jpg

Sprinkle toasted coconut in a 22 x 22cm sprayed pan, spoon thick Marshmallow mixture on top
20250405_172139.jpg

Flatten with a spatula, sprinkle more coconut on top, and smooth the top

The Long Wait!

Leave the mixture to stand for at least 6 hours before attempting to cut into squares, or your Marshmallows will not be properly set, and you will not be able to cut neat squares!
Do not be tempted to place it in the refrigerator; simply lightly cover it with a food net and leave it at room temperature. Move it out of the kitchen if there will be a lot of steam from cooking. The Marshmallows need to dry out.
Spray the knife before cutting, clean after each cut, and spray again, till done
I used a ruler to try and cut even squares!
20250406_102349.jpg

Carefully remove from pan, roll sides in coconut, and you're all done!

Serve on a pretty plate and see how fast these delicious light and fluffy Marshmallows disappear!

Store at room temperature in an airtight container, not in the refrigerator!

Those look AND sound delish!

They're sinfully delish, and because they disappear so quickly, you keep on reaching for another, and another😉

I don't like to use Gifs on Hive, but now I have to!!! You left me no choice dear Lizelle 😆 However, I'm on diet, so I can't eat it right now, but have bookmarked for later and I'm sure I'm going to try it out as it looks really delicious, even mouth watering 😍

They're very sweet, so sorry, but you'd better stay away when on a diet. I'm also not much of a GIF fan, but some are so cute, like this one😍
I hope you're keeping well, dear @erikah!

These look absolutely divine, Lizelle! I love how you infused the post with personal stories — it made the recipe feel so cozy and nostalgic. I’ve never tried no-cook marshmallows before (I dint even know it was possible to make marshmallows at home tbh), but your step-by-step photos and tips make it seem totally doable.

It is quite something seeing how it fluffs up when you start beating; very good marshmallows indeed. Thank you for stopping by @yugadi 🤗

I hope there are still at least one marshmallow left - maybe I am late but I am coming. My vehicle is ready 😉

🤣🤣🤣 that is so cute, I'll be waiting on the shoreline (with my parasol protecting my delicate skin. Hope you have a soft landing 🤗

I don't think I've ever eaten that, but with the description you give, I can imagine.
The kitchen must have been my happy place in another life because sometimes I feel a longing that makes me invent dishes. They don't come out as delicious as yours.

Greetings!

If you enjoy the kitchen, @nanixxx, keep on experimenting, and you're sure to find your skills improving. I learnt much from all my mistakes!
This is the most common marshmallows found in our stores:

Thank you, @lizelle. Maybe I ate it once... 😶

Well, I'll take your advice, and I might even get around to posting some of it on Hive. I've done some in the past but I've stayed away from that impulse.

Happy start of the week!

They say practice makes perfect and it's so very true!
Have a great week @nanixxx 😊

These are beautiful and delicious...

They are delicious, thank you @weone

These look so yummy! I really want to try this!

It's super easy and very good. I hope you try the recipe. Thank you also for the reblog @calendulacraft

All I need is the right mixer. I have tried this before with a blender or an immersion blender but, no luck! your post confirms that I need the hand mixer/beater to make them properly. I like the advice about not being tempted to put them in the fridge or cut them before they have set. All of those mistakes I have made in the past. So I reblogged it to come back to when I have acquired the correct tool.

A hand beater on high works best, for sure. I was tempted to put it into my Kenwood but the bowl is too big, so I patiently stood with the hand beater! I found 15 min was quite enough, although the recipe says 15-20. I had the mixture in the pan by 6 pm, so I had to leave it for the next morning. Important to spray the knife and clean it with a paper towel between each cut and then spray again, or use coconut oil or butter.
I'm sure you'll have success with a hand beater!

I've always wanted to make it myself, and it's so tempting.

It is very good!

What, with just fre ingredients too? I want to try thay homecooked marshmallows too. And it looks easy to prepare too. I'm so curious how soft it it though 🤤🤤

Featherlight and spongy, but firm enough to pick up as with store-bought marshmallows.

Now I can make some for my daughter. Your recipe will help me a lot. Thank you.

Enjoy, they're super easy to make!

omg! my YOUNGEST daughters favorite is marshmallow. i would try to make this one

It's really easy, enjoy!

The dish is good with visual, but i knowing more with taste. 😍

Yes it's fluffy and delicious!

Oh my hat these look absolutely delish! Also, I am always looking for something interesting to use as cake/ cupcake toppers and these could be amazing! Especially if I can pipe them into molds? I will definitely give it a try!

They look delicious !

I've always wanted to try making real, original-recipe marshmallows - they use the mucilage from the roots of marshmallow plants, but I never got around to growing enough of them. Plus, the bees liked them so much I was reluctant to dig them up to get at the roots. But the flowers went brilliantly in salads, they've got an amazing peppery flavour and they really are pink and white like a good marshmallow should be !

Gosh, I've never heard of Marshmallow plants; that's fascinating! I must see if they grow here. That must be why the sweets are pink and white as well ;)
Thank you for the interesting response, you've made me curious @alonicus

that looks mouth watering 🤤

It was!

They look delicious. I'm also diabetic, and I try to limit myself from eating cakes, sweets, and many foods that are forbidden for diabetics, but I can't control sweet bread; I eat too much of it. The method for cutting marshmallows is very interesting./Se observan deliciosos.

Sorry @josedelacruz, unless you have a sugar low😉

Yes, thank God it has remained low./Si, gracias a dios se me ha mantenido baja.
