Hello my dear friends, today I want to share a dish that I made at home for my family, it is a vegan dish, which without exaggeration is very rich, healthy and very economical to make, and that I accompanied with a delicious avocado that soon I will share something about its origin, in this way I will tell you the steps to prepare this healthy dish.

|1/2 cebolla redonda||1/2 round onion|
|1 aguacate||1 avocado|
For the preparation of my zucchini pasta I used two tools, the first one a vegetable peeler, with which I removed all the zucchini skin, when I had it clean I proceeded to use my second tool which is a vegetable cutter in the form of a sharpener that helped me to give the shape of pasta to my zucchini.
After shredding all my zucchini I started chopping the other vegetables such as tomato, round onion and cilantro to make my dish very colorful.
I immediately took the seasonings to the kitchen to make the sofrito, then I added the zucchini paste and started stirring it, at this point I can tell you that it smelled very good. The cooking process of the zucchini is very fast, just three minutes, so that it does not lose its al dente texture.
One thing I would like to tell you is to add salt before eating, because if it is added during the preparation the zucchini will release a lot of water and would not have a nice presentation.
At the end my dear friends, when serving it, I used avocado to garnish my dish and also for my taste it is an excellent accompaniment for this dish, if you dare to make it you will surely love it.
