Delicious Springy Longan & Goji Berries Konnyaku Jelly

Yummy jelly in the making.

Hello there!
Since it's a Thursday again I am in the mood of making some of my signature delicious jelly.
It's been a very long time I didn't get to make this kind of jellies and I do missed eating these springy yummy jellies.
So today is the day and I will be sharing the recipe with you.😄

All you need are this few simple ingredients.

  • 10g Konnyaku Jelly Powder
  • 1400 ml water
  • 300g brown sugar
  • A handful of dried longans (pre-boiled to hydrate and soften it)
  • A handful of dried goji berries (steep in hot water to hydrate and soften it)

After preparing all of your ingredients it's time to prepare the jelly liquid.

Time to mixed the brown sugar and konnyaku jelly powder with water in a pot and bring it to a boil while constantly stirring it. Once it's already boiling you can now let it cooked in low heat.Don't forget to keep stirring from time to time. Once the texture of the mixture is smooth and silky you can take it off the stove.

Now you can cut the pre-boiled dry longans into smaller size. I am using a kitchen scissors because it is so much easier that way.

In a bowl now u can mixed in the cut longans and the goji berries.

Then mixed in your jelly mixture and give them a good stir.

You can now pour in small containers like these and let it cool down and harden.

I didn't have enough small containers so I will just leave the rest in this bowl.Once it has already cool down and harden, I will just cut it into bite size.

That is all for this simple yet delicious jelly recipe.

Be sure to chill it in the fridge once it has cool down before serving.
Normally I will leave it overnight in the fridge because trust me it will taste better after it has set properly overnight.
