It's been a few months since I last ate food with vegetables. Lately, I've only been eating canned and processed foods. However, our Pathfit instructor recently gave us a project to set a fitness goal and show visible changes in our bodies. If we achieve noticeable results, he will give us high grades as a reward for our effort.
This challenge motivated all of us. Some are excited to make changes, while others are unsure which parts of their bodies to focus on.
Before this, I had already engaged in outdoor activities like walking, jogging, and swimming, but I never took them seriously I would only do them for a week at most. This time, it's different because our grades are at stake.
To start making changes, I gradually improved my eating habits. One of the steps I took was cooking pancit with vegetables. Here’s how I made it:
Ingredients:
•Bihon (Versaille)
•Garlic
•Spring onion
•Carrot
•Chayote (Cayote)
•Bell pepper
•Pechay
•Water
Steps:
Soak the bihon (Versaille) in water for a few minutes.
Heat some oil in a pan, then sauté the garlic, spring onion, and bell pepper.
Add the hard vegetables—carrots and chayote then pour in some water. Let it boil until the vegetables soften.
Add the soaked bihon (Versaille) and mix everything well. Let it cook for a few minutes.
Once everything is well combined and cooked, it's ready to serve!
Since I was the only one eating, I used just one pack of bihon to avoid waste. Also I cook pjnakbet for the squash. Despite the rain, I managed to cook it perfectly and was satisfied with the result.
