Off late, Indian street food has gained much more popularity. One of the great things about Indian street food is that it is readily available in almost any place. There are so many option available, from snacks to proper meals, you name it and it is easily available right away. The increasing popularity is due to the busy lifestyles people leading nowadays. Also the ready availability of such delicious food anywhere and everywhere makes it more convenient for people to crave on them. While regular restaurants, especially in smaller Indian towns, usually close at around 9 PM, street food stall or kiosk is often available operative till late at night in most cities. I ended up to one such kiosks while making my way back home.
It was a small cycle cart that was operational late at 10PM selling Boiled Eggs and Omlette, Fried eggs, and Bhurji. It proved to be life line for us, as we are running out of our body fuel i.e. we were too hungry. We did not had lunch in the day, as it was going to be a long drive back home and when we saw this at the roadside, we stopped there to refill our stomach. Located at one corner of the lonely road. It was looking for customers and we arrived for him knocking at his stall.
People have different opinions about the street food. Some consider them as un-hygienic, while some street dishes are specialties of certain regions. Varanasi, in Uttar Pradesh, Chandni Chowk, in Delhi are quite a popular place for the street food where people can visit any time to crave on the different mouth watering dishes.
But in our cases this was the only option left to us. Eggs stalls on the streets are a very common eating option during the winter day. That is why the number of such stalls increase during this time of the year. It is a good earning option for many person, who earns a good income selling Egg based dishes to the public at a reasonable and affordable rate. Better than any expensive restaurants.
The stall is like a small moving kitchen with all the cooking material readily available. From a mini gas stove, to frying pans to spices to eggs, to other items. For any common person it appears to be a mess cart, but for the owner it was well staged.
Checking all the available option with him, we ordered two plates of Bread omlette. It is one of my favorite option during the winter and enough to stuffs the tummy. It is generally made bread wrapped in the eggs liquid and cooked properly. The stall has the necessary material for a quick recipe. Chopped onions, coriander, tomatoes chillies were ready for cooking.

If you are not used to Indian street food, be aware that it is generally spicier than many restaurant dishes. But we made sure to guide him with our tongue taste. When these vendors have enough time they can make the dishes as per customer liking. Else when there is crowd, they alwsys prefer to go with their flow of prepsrstion. Bread omlette is one of the quicker mesls one could have as it does not require much time and effort.
Well, looking at their black burned cooking pan, I once hesitated, but you cannot expect more from these stalls. They regularly keep thir pan on stove. I asked about the cleanliness on which the guy said that they wash them with dish wash soaps before begining their daily business. It is not possible to wash them regularly during the busy evening hours. Anyway The item was very delicious, and it was served on a leaf plate.
As is evident from the above image, it is much better in taste. It is also inexpensive making them go to option for most of the people in India. We enjoyed every bit of it. It satisfy our hunger and we moved ahead to cover the remaining distances to reach home.
