It was time to restock the freezer for my husband's breakfasts. This is one of the recipes that I make for him on a regular basis. He pulls one out of the freezer the night before and lets it defrost in the refrigerator. It only takes him a few minutes to reheat it for his breakfast. I prefer to make different things in large batches for him to choose from.
Sunscapes Breakfast Casserole
1 can of each: corn, carrots, green beans, mixed vegetables, diced tomatoes with green chilis
12- 15 eggs
12-15 hash brown patties or 1 package of frozen hash browns thawed
1 roll of buttermilk biscuits
shredded cheese - I use a Mexican blend
2 cups of diced, cooked ham or 1 lb of ground pork sausage
This is very simple to make I use whatever vegetables I have on hand. For this one, I used carrots, green beans, corn, mixed veggies, and diced tomatoes with chilis.
I put the hash brown potatoes with parchment paper in a deep-sided pan for the bottom layer. After draining all of the vegetables and beating the eggs, I season them with salt and pepper and add the meat and cheese, mixing well.
With everything combined, I pour the mixture over the hash browns and bake it at 375 degrees for 45 minutes. This is the point that I remove the pan from the oven to put the buttermilk biscuits on top. Sprinkle a little more cheese on top and continue cooking until the biscuits are golden and the eggs are totally set up. It often takes another 15-20 minutes.
After cooling in the pan for 30 minutes or so I tilt the pan and pull out the entire casserole with the parchment onto a large cutting board to cool.
Slice the casserole into single-sized portions and put them onto a parchment-lined cookie tray to freeze overnight before packaging. These portions freeze and thaw perfectly and can easily be reheated. It really makes it easy for me to have different breakfasts prepared for my husband. He can choose which he wants any day of the week while I take time with my morning coffee to create posts for Hive.
Look how nice and thick the pieces come out, making them a hefty breakfast to start the day.
