Yep, I finally took the time to make "Cabbage Steaks" for the first time. I was inspired by Pam @goldenoakfarm when I saw a post from her when she made them for dinner. So, here is my first attempt at making them.
Cheesy Roasted Cabbage Steaks
I must admit I did not have a recipe to follow, so I used my imagination and went for it.
After removing the outer leaves I sliced the cabbage into 3/4" slices and laid them on a parchment-lined baking sheet.
I put some olive oil in a bowl and added a bit of onion powder, garlic powder, paprika, Italian seasoning, salt, and black pepper without measuring the spices. Yes, I tend to do that a lot!
Using a pastry brush, I brushed the cabbage surface thoroughly and sprinkled it with the parmesan cheese.
Baked in the oven at 400°F for about 30 minutes. I tested them to see if they were getting cooked enough before removing the tray to add the cheese.
I couldn't decide what type of cheese to use for the final topping, so I went with mozzarella for half and a mixture of sharp cheddar, Colby jack, and mild cheddar for the rest.
I put them back into the oven and cooked them until the cheese was bubbly and melted.
The cabbage steaks were delightful with the lemony chicken thighs and roasted corn. We both agreed that our favorite was the cheddar cheese mixture over the mozzarella.
There were enough cabbage steaks for two more meals. I froze them on a tray and vacuum-sealed them to have for another night. They will be a nice addition to a comfy-cozy winter meal.
