Breakfast is usually my favorite meal which usually is light like tea 🍵 or some cereal 🥣 . I can’t start my day without breakfast. And considering how most times family dinner happens early, one would have gone hours through the night eating nothing, so I make sure to eat breakfast even if its tea with cookies or anything light. I enjoy it so much because it keeps me focused.
But today I needed something different for breakfast. Plantain omelette. This plantain omelette is so great for breakfast and we can as well enjoy it just as much for lunch or dinner. Its delicious, easy to make and the perfect mix of flavors and texture for a change from our kitchen routines.
One thing I love about plantains is the sweetness which always make it a delicious meal 🥘 in any way. And honestly speaking I can’t take my eyes 👀 off plantains anytime I go grocery because for many years now I have continued to enjoy this plant food in many ways and just like the recipe I made today to share with you, another way you could enjoy your plantains.
The recipe is a special one to be precise because of the way I made this plantain omelette with lots of onions and spices in an egg combination which leaves this recipe as an exquisite dish you can enjoy for breakfast, lunch, dimmer or even side dish.
How exotic it is to make a delicious plantain omelette with lots of onions in it and flavors from other spice ingredients that gave it a desired warm taste as a dish. And not just making it for family alone, make it also for friends. You can not afford to miss this recipe full of yummies 😋
.Here I take you through the step by step from my kitchen.
INGREDIENTS:
2 large plantains
2 large egg
1 large onions 🧅
1 large cherry tomatoes 🍅
Fresh onions stems
1/2 teaspoon of chili powder
1/2 teaspoon of curry powder
1/4 teaspoon of salt to taste
Vegetable oil for frying
STEPS FOR PREPARATION:
Step 1.
I will start this recipe by first washing, cut open and slice the plantains
Then will turn it into a bowl 🥣 adding pinch of salt to it, stirring.
Step 2.
Next is to heat the oil and fry the sliced plantains into golden brown, flipping it over.

Step 3.
Here will wash and slice the cherry tomatoes 🍅, onions 🧅 and onions stem.
Step 4.
Will break and beat the eggs evenly 🥚
Then here will add the chili powder, curry powder and pinch of salt. Beat the spices here properly to texture well.
Step 5.
We add the sliced tomatoes, onions and onions stem into the egg here , beat them together properly.

Step 6.
And the ingredients are readily here.
Step 7.
To finally make the omelette, I will add veg oil into the pan to heat up, then scoop inn two cooking spoons of the egg mix here above.
Then gradually place the fried plantains on it as it fries. And here added onions to cover all around , adding more plantains on the onions.
Step 8.
Will scoop and use up the egg mix and cover to form together lastly.
The omelette is ready to be served here.
This is a whole meal on its own. And the quantity can serve for two either breakfast, lunch or dinner. And the good thing about this meal is how rich and healthy it is because the onions in it is everything we need for vitamin A boost. Taste so delicious for everyone.
