Plant based cauliflower cheese

I had a cauliflower in and so I whipped up this plant based dinner.

I baked the cauliflower for 30 minutes with some olive oil and a sprinkle of salt. When cooked I blended 1/2 a cup of soaked cashew nuts, some pine nuts, a cup of plant based milk (add if needed) and a clove of garlic. I then poured this mix into a pan and slowly bought to temperature, I added 4 tablespoons of nutritional yeast and half a teaspoon of parika. I then poured the sauce over the cauliflower. This was so delicious.



Mmmm, YUM! i used to LOVE cauliflower cheese, before i was vegan.. well im not 100% now but i dont really eat cheese anymore, just Ghee which i consider to be medicine.,,

It's all about the nutritional yeast, it rly iis quite cheesy,, maybe not like hard cheddar but in a sauce like this tastes rly cheesy esp with the mix of pine nuts. I have been free whole time haha but just waiting for things to open up still for sure, the sunny weather is making day trips at least more fun.
