Quick and easy healthy vegan meal. I made this by boiling a mix of lentils and split peas with a veg stock cube. When almost ready in a pan i fry a little coconut oil and add chilli, garlic and onion. Once soft and browned I then add some chopped tomatoes, when cooked I pour in the lentil mix with 1 teaspoon of cumin and 1 teaspoon of tumeric and simmer till the sauce is just the right amount for personal taste. I add kale or spinach when it is almost ready.
