I am cooking a special food for all of us.
That was the response she gave me with all smiles when I asked her what she was cooking. I was captured by the aroma that wafted from the kitchen, teased my taste buds and pulled me in to have a look and be part of the curlinary adventure.
I stayed around and by the time she was done, she served it with rice. The taste of the Catfish sauce lit up an excitement on my face (Oh! I think I have found a new favorite food). It was tasteful and flavourful with a balance of spices and the richness of the food made me fall in love with it. I mean, everyone enjoyed and loved the meal. It became my Mom's signature Catfish sauce for family bonding.
Till date, my mom loves to prepare it wherever we gather for a family occasion or she would leave it for my elder sister and me to prepare. There is a special excitement that lights up the house with the spirit of love and unity when we gather as one family. My little nephews and niece enjoy this sauce sooooo much that it gives their grandparents (my parents) so much joy.
Now let me share this special recipe.
My Mom loves to use big Catfish, just like this one, and so do I.
Ingredients
- Catfish.
- Freshly blended tomatoes, cayenne pepper and habanero pepper.
- Purple Onions.
- Fresh ginger and garlic (blended).
- Curry powder.
- Thyme.
- Mixed spices.
- Seasoning.
- Salt.
- Carrot.
- The three bell peppers (Green, Yellow and Red).
- Spring onions (also called green onions).
- Water.
- Vegetable oil.
Procedure
- Chop the vegetables and keep aside.
- Wash the Catfish very well with lemon or lime and put in a clean pot. (The lemon removes the slime on the Catfish).
- Add the curry powder, thyme, mixed spices, seasoning, salt, ginger, garlic and the purple onion. Pour some water and allow to cook for about 5 minutes.
- Add the blended tomatoes, cayenne pepper and habanero pepper and vegetable oil and allow to cook for some minutes.
- Stir but be careful so that the Catfish will not scatter.
- Add the chopped vegetables, stir and allow to cook for 1-2 minutes.
- The Catfish sauce is ready to be served with rice.
I love to do some platting before I eat and so I played with the rice, some stir-fried bell peppers and fried plantain.
