I enjoy my mignon and you will get it right as it is not easy judging the heat of the pan and like anything practice makes perfect. The strawberry pavlova would go well with this and now you just need to find a starter lol. Just curious what did they rush you for the fillet as I know it is not cheap and we have it mainly for special occasions here when we do steak peppers. Happy New Year to all of you.
