Maybe most of us are enjoying every weekend with family and friends over food and maybe with some flavored drinks, especially those who are working outside the home.
But even for me as a stay-at-home mom and wife, I sometimes cook a bit of special dishes on weekends.
I'm going to share our viand for lunch today. I prepared and cooked "Braised Pork Ribs with Veggies" today. It is supposedly flat ribs that I like the most, but they’re not available this morning, so my husband just bought these pork ribs, instead. It's still good because it's fresh and meaty, though.
And you may have noticed that I always add veggies to my pork and chicken meat dishes. I just want to balance the nutrients in most of the dishes I cook.
Here's my version of "Braised Pork Ribs with Veggies".
"Braised Pork Ribs with Veggies"
INGREDIENTS:
- Pork Ribs
- Potato
- Carrot
- Green Peas
- Tomato Paste
- Onion
- Garlic
- Bell Pepper
- Kalamansi
- Soy Sauce
- Ginisa Mix
- Ground Black Pepper
- Garlic Powder
- Paprika
- Salt
- Sprite
- Canola Oil
- Water
PREPARATION:
Wash the pork ribs thoroughly.
Then marinate the pork with Sprite, soy sauce, tomato paste, and the powdered seasoning that I mixed already which includes ground black pepper, garlic powder, paprika, and magic sarap. After marinating, set it aside.
Wash and peel the potato then cut or slice.
Wash and peel the carrot then cut or slice.
Peel and wash the onion then cut it into small pieces.
Crush and peel garlic then cut in small pieces.
Wash the bell pepper and then cut.
Then set all the prepared ingredients aside.
COOKING TIME:
Heat some canola oil in a pan. Slightly fry the potato and carrot in a medium heat.
After frying, transfer them to a clean plate.
Add a little amount of canola oil in the pan, turn the cooker to high heat, and then sear the pork ribs until they are finished and transfer to a bowl or plate.
Using the same remaining cooking oil in a pan or cooker, sauté the onion and garlic until fragrant. (I set aside some onions as garnish later)
When it's already fragrant put the seared pork ribs. Stir to mix then add the sauce from the marinated pork. Cover the pan and let it simmer until the pork becomes tender. You can add water if you like or if the pork is still hard then continue cooking. When the pork becomes soft and tender already and the sauce reduced and thickened, do the tasting then add some seasoning according to your desired taste.
Then, add the slightly fried potato and carrot, then the bell pepper and green peas. Continue cooking for a few minutes and then garnish with some sliced onions.
Put off the heat and there you go...it is ready to serve while hot and aromatic. Again, my family loved it. It's truly yummy!!😋
