I had some young coconut shoots stored in the vegetable compartment of my fridge. Today, I decided to take them out to cook something because they’d been there for two days. They were still fresh, but I didn’t want to keep them any longer. This morning, I used them to make a spicy coconut milk curry, it pairs perfectly! I’ve made this dish before, and it always turns out delicious.


Have any of you ever seen or tried young coconut shoots?

  • Young coconut shoots (ยอดมะพร้าวอ่อน) are the tender, undeveloped core of a coconut palm tree. They are white or cream-colored, crisp, slightly sweet, and have a soft texture similar to bamboo shoots or banana blossoms. The edible part is the innermost heart of the palm, which requires cutting down the entire tree to harvest (like palm hearts in Western cuisine).

How to use them in cooking:

  • Add to coconut-based curries like spicy Thai curry (แกงเผ็ด) or aromatic stir-fried curry (แกงคั่ว).
  • Toss into salads (ยำ) or clear soups (ต้มจืด).
  • Stir-fry with oyster sauce or boil and serve with chili dip (น้ำพริก).

Ingredients and Condiments || วัตถุดิบและเครื่องปรุงรส 🥩🧂


  • Coconut milk 250 ml. | น้ำกะทิ 250 มล.

  • Pork 200 grams | เนื้อหมู 200 กรัม

  • Young coconut shoots 150 grams | ยอดมะพร้าวอ่อน 150 กรัม

  • Red curry paste 1 tablespoon
  • Shrimp paste 1/2 tablespoon
  • Sugar 1-2 teaspoons
  • Fish sauce 1 tablespoon
  • Seasoning powder 1 teaspoon
  • เครื่องแกงเผ็ด 1 ช้อนโต๊ะ
  • กะปิ 1/2 ช้อนโต๊ะ
  • น้ำตาล 1-2 ช้อนชา
  • น้ำปลา 1 ช้อนโต๊ะ
  • ผงปรุงรส 1 ช้อนชา

Preparation of ingredients || การเตรียมวัตถุดิบ


  • Pork: > Wash the pork thoroughly, pat dry, then slice thinly into bite-sized pieces. Set aside.

เนื้อหมู > ล้างให้สะอาด ซับน้ำออก หั่นบางเป็นชิ้นเล็กพอดีคำ พักไว้


  • Young coconut shoots: > Rinse thoroughly and let drain.

ยอดมะพร้าวอ่อน >ล้างน้ำให้สะอาด พักให้สะเด็ดน้ำ


Procedure to cook || ขั้นตอนการปรุง


  • Prepare the pan: > Heat a pan over low heat. Add a small amount of coconut milk to stir-fry the curry paste with shrimp paste.

นำกระทะตั้งไฟอ่อน เทน้ำกะทิ​ใส่เล็กน้อย เพื่อใช้ผัดเครื่องแกงกับกะปิ


  • Cook the curry base: > Once the coconut milk begins to warm, add the curry paste and shrimp paste. Stir-fry until fragrant and well combined.

เมื่อน้ำกะทิเริ่มร้อน ใส่เครื่องแกงกับกะปิลงไปผัดให้เข้ากันจนหอม


  • Add the pork: > Add the sliced pork and stir-fry until fully cooked.

ใส่เนื้อหมูที่หั่นเตรียมไว้ลงไปผัดจนสุก


  • Simmer with coconut milk: > Pour in the remaining coconut milk, stir well, and bring to a gentle boil.

เติมน้ำกะทิที่เหลือ คนให้เข้ากันดี รอเดือด


  • Incorporate the shoots: > Add the young coconut shoots and mix thoroughly. Continue cooking until the shoots are tender.

ใส่ยอดมะพร้าวอ่อนลงไป คลุกเคล้า​ให้เข้ากัน ตั้งไฟต่อจนยอดมะพร้าวอ่อนสุก


  • Season: > Season with fish sauce, sugar, and seasoning powder. Adjust to taste, then turn off the heat.

ปรุงรสด้วย น้ำปลา, น้ำตาล และผงปรุงรส​ชิมรสชาติตามชอบ ปิดเตา


  • Serve: > Transfer to a serving dish and enjoy hot!

At first glance, I thought it was fries and I was like... ohh some French fries recipe :D Here in the Philippines, they cut it in julienne style. I never knew you could cook it with curry. Look delicious :D
