Wild Garlic Chili Oil Recipe

Wild garlic chilli oil is one of the condiments that I love to make during wild garlic season; I enjoy its aroma, and it enhances the flavour of meals.

This version I came up with is a little different from the previous one I made, and the shelf life is longer—6 months, maybe more if prepared and cooked correctly.

Firstly, I gathered some fresh wild garlic leaves, and flowers can be included.

Ingredients:

1.2 litres olive oil
250 grams tomato
200 grams of wild garlic
200 grams peanuts
80 grams salt
200 grams of chili flakes
6 tablespoons sugar (adjust to your preference)
3 tablespoons dried garlic (optional)
Instructions:

(For safety reasons, this recipe involves turning the heat on and off to prevent the oil from overflowing and sizzling too much.)

Blitz the peanuts, then dry fry them ( this will intensify the peanut taste and aroma)

Blitz the wild garlic, tomato, and salt in the blender, then set aside. (You can also ferment this mix for a couple of days or so for a more complex flavour.)

Heat the oil to 220 degrees Celsius.

Turn the heat off, then carefully add the wild garlic mixture.

Turn the heat on and let it reach at least 210 degrees Celsius. Cook for 10 minutes or until the oil turns green and the mixture is all separated, meaning the water has mostly evaporated.

Turn the heat off, then add the peanuts, then turn on to cook for 10 minutes.

Turn off the heat, then add the chilli flakes, sugar, and dried garlic. Turn the heat back on and cook until the chilli imparts a pleasant toasted aroma but is not burnt.

Combining wild garlic, tomatoes, peanuts, and chilli flakes creates a rich, aromatic flavour profile.

This wild garlic chilli oil boasts a complex flavour profile that harmoniously blends robust garlic notes with a subtle sweetness, a hint of heat from chilli flakes, and a savoury undertone from salt, tomatoes, and peanuts. The herbal essence of wild garlic leaves adds freshness and depth to the oil, resulting in a versatile condiment that enhances the taste of various dishes with its rich, aromatic essence!
