Lomo Saltado


This is a recipe from the Peruvian gastronomy, it has an interesting combinations with french fries, I consider it to be simple to prepare and without much effort.

Esta es una receta de la gastronomía peruana, tiene una interesante combinaciones con papas fritas, considero que es sencilla de preparar y sin tanto esfuerzo.

We are going to need steak meat and we are going to cut it into strips.

Vamos a necesitar carne en filete y la vamos a cortar en tiras.

Then we will season it with a few garlic cloves and a teaspoon of cumin and let it rest for a few minutes.

Luego la vamos a aderezar con unos cuantos dientes de ajo, una cucharadita de comino y dejamos reposar.

Meanwhile we can prepare our fries with normal potatoes, cut into long strips and place them in the hot oil and reserve.

Mientras tanto ponemos preparar nuestras papas fritas, son unas papas normales, cortamos en tiras largas y las colocamos en el aceite caliente y reservamos.

Now we need two medium onions that we are going to cut into julienne strips.

Ahora necesitamos dos cebollas medianas que vamos a cortar en juliana.

We are also going to cut some tomatoes in the same way.

También vamos a cortar de la misma forma unos tomates.

We are going to start cooking the meat, in a pot with a little bit of oil and we will check until it is ready.

Vamos a cocinar en un poco de aceite caliente nuestra carne, vamos chequeando hasta que esté lista.

Once it is ready we will reserve our meat and if it released any juice you can save to use it later if you prefer in any other recipe.

Una vez esté lista vamos a reservar nuestra carne y si soltó algún jugo ustedes pueden guardar para usarlo luego si prefieren en alguna otra receta.

In the same pot where we cook our meat we are going to add another little bit of oil and we are going to cook the onion until it becomes transparent.

En la misma olla donde cocinamos nuestra carne vamos a añadir otro poco de aceite y vamos a saltear la cebolla hasta que se vuelto transparente.

Now is the perfect time to add meat

Ahora es el momento perfecto de añadir la carne

We will also add the tomato and mix a little and leave this until the tomato is cooked, the tomato cooks very quickly and this is why we add it last.

Añadimos el tomate y mezclamos un poco y dejamos hasta que el tomate se haya cocido, el tomate se cocina muy rápido y es por esto que lo agregamos de último.

When the tomato is ready, that's when we are going to add our fries, yes, we add our fries here.

Cuando ya el tomate esté listo, agregamos nuestra papas fritas, sí, agregamos nuestra papas aquí.

If you want to add a little color to your food you can also add a little coriander or parsley, this is optional just to highlight the colors of the dish.

Si quieren añadirle un poco de color a su comida pueden añadirle también un poco de cilantro o perejil, esto es opcional sólo para resaltar los colores del plato.


And here you have it, lomo saltado. I reserve some fries to make the dish look much better and we accompany this dish with rice.

Y aquí lo tienen, el lomo saltado. Reserve unas papas para que luciera mejor el plato y acompañamos este platillo con un poco de arroz.
