Summer Special - Mint and Coconut Pulao with Cucumber Raita..

Hi All.. How are you.

Today is a new Sunday and here I am back with my new creation - Mint and Coconut Pulao with Cucumber Raita..

As we are in the peak of Summer and temperature is increasing day by day, this time I wanted to cook something with is healthy, filling and same time easy to digest. After lot of thinking about what to cook which everyone will like in my family including my toddler, I came on conclusion to prepare Mint and Coconut Pulao with Cucumber Raita. My today's recipe is purely a summer special delicacy because it has Mint, Yogurt and Cucumber as the main ingredient which are very good for our body during summer.

So let's start with preparation and cooking.

INGREDIENTS

FOR PULAO

🌱 Any Non Sticky Fragrant Rice : 3 Cups
🌱 Mint Leaves - 1 Bunch
🌱 Coriander Leaves - 1 Bunch
🌱 Garlic - 7-8 Cloves
🌱 Ginger - 1 Inch Piece
🌱 Fresh Coconut - 1/3 Cup
🌱 Green chili - As Required
🌱 Onions - 3 Medium Sized
🌱 Potatos - 2 Medium Sized
🌱 Frozen Cut Vegetables - 1.5 Cups
🌱 Cashew - 1/4 Cup
🌱 Ghee (Clarified Butter) - 2 tablespoon
🌱 Choice of Whole Spices like Bay leaves, cinnamon sticks, Cloves, Star Anise
🌱 Garam Masala - 1/2 Teaspoon
🌱 Salt - As per taste

For Cucumber Raita

🌱 Yogurt - 1.5 Cup
🌱 Cucumber - 2 Nos
🌱 Tomatoes - 2 Nos
🌱 Chat Masala - 1/2 Teaspoon
🌱 Black Pepper - 1/4 Teaspoon
🌱 Salt - As per the tast
🌱 Green chili - If Required

PREPARATION

Wash rice and soak for 30 minutes. You can use long grain basmati rice or any non sticky fragrant rice. I used here fragrent small grain Ambe Mohar rice because its easier to digest.

Clean mint leaves and coriander leaves.

Peel onions and potatoes. Cut onions into fine long pieces and potatoes in square pieces. Remove frozen vegetables from the freezer to thaw.

RECIPE

Make fine paste of mint, coriander, ginger, garlic, coconut and green chillies.

Heat oil in the pan. Add 2 Tablespoon ghee.

When ghee is hot, add cumin seeds for tempering. Same time add whole spices like Bay leaves, cinnamon stick and cloves also.

Now add chopped onions in the pan and fry until turns translucent.

Now add halved cashew in it.

When the cashew turns golden, add potatoes and vegetables. Mix it well and cook for some time.

Add garam masala powder.

Now add soaked rice in it and add water as required.

Now add mint, coriander, coconut paste and mix properly. Add little more water if required.

Add salt as per the taste.

Cover the rice and let it cook on low flame. It will take around 15-20 minutes to cook properly.

By the time rice is being cooked lets prepare cucumber raita.

Cut the cucumbers and tomatoes in small pieces. Beat the yogurt to make it smooth.

Mix everything, yogurt, chopped cucumbers and tomatoes along with chaat masala, black pepper powder and salt. You can add chopped green chillies also it want it spicy. Keep it in the fridge until pulav is getting ready.

Raita is ready. Lets check our pulao, this is also ready.
