Welcome to my blog. This is yet another Sunday and I am ready with my new creation for Creative Sunday. This time this is Tangy Tomato Rice with Cucumber & Mint Yogurt
I am preparing tomato rice in pressure cooker.

For Preparing the Tomato Rice we need :
♦️ Tomatoes - 5 Nos.
♦️ Onions - Nos.
♦️ Rice - 300 Gms
♦️ Ginger - 1 Inch Piece
♦️ Garlic - 7-8 Cloves
♦️ Green Chilli - 2 Nos
♦️ Cashew - 15-20
♦️ Fresh Coriander Leaves - Handful
♦️ Curry Leaves - 10-12 Leaves
♦️ Ghee (Clarified Butter)- 1 Tablespoon
♦️ Cooking Oil - 1 Tablespoon
♦️ Salt - As per the taste
♦️ Turmeric Powder - 1 Teaspoon
♦️ Coriander Powder - 1 Teaspoon
♦️ Garam Masala - 1/4 Teaspoon
♦️ Cumin Seeds - 1 Teaspoon
♦️ Whole Spices - Cloves, Bay Leaf, Cinnamon Stick As Required

For Preparing Cucumber & Mint Yogurt we need :
♦️ Cucumber - 1 No.
♦️ Fresh Mint Leaves - Handful
♦️ Yogurt - 250 Gm
♦️ Salt - As per taste
♦️ Chat Masala - 1/4 Teaspoon
♦️ Black Pepper Powder - 1/4 Teaspoon

Preparation :
Wash rice and keep aside. Chop the tomatoes in big pieces and make the puree without adding water.
Chop onions in long pieces.
Cut Cashews into halves.
Grate ginger and garlic together. You can also make paste with ginger and garlic.

Process : Tomato Rice
Heat pan, add ghee and cooking oil.
Add whole spices - Cloves, Bay Leaf, Cinnamon Stick and cumin seeds.
Add chopped onions in the oil.
Once onions are turning translucent add grated ginger garlic or ginger garlic paste.
Let onions fry for some more time.
Add cashews.
Now add tomato puree in the fried onions and let it cook until tomato puree thickens and leave oil.
Add turmeric powder, coriander powder and salt in it.
Add curry leaves.
Now add chopped coriander leaves.
Now add washed rice in it and mix it well.
Add water as required so that rice can cook properly.
Now add little garam masala.
Close pressure cooker and cook until 1 whistle.
Open the pressure cooker once pressure is released. Our Tangy Tomato rice is ready now lets prepare the cucumber mint yogurt / raita.

Process : Cucumber & Mint Yogurt / Raita
Take one Cucumber, wash it and chop it in small pieces.
Wash and finely chop mint leaves and add in chopped cucumbers.
Add chopped green chillies.
Now add yogurt in it.
Mix well and add salt, chaat masala and black pepper powder.
Our both items are ready and its time for plating.
