How are you doing. It's Sunday today, i hope you all had a great weekend and a happy leisure time. Sunday is usually a chill day for everyone. I used to love cooking on Weekends because during weekdays I didn't get enough time to cook. So today I have made Brown rice cooked with veggies. It's a simple, healthy, nutritious and delicious meal. This is also oil free cooking recipe.
Let's see the Ingredients:
Brown Rice
Vegetables -One Carrot, few Green Beans, a Tomato, a green chilli and a bunch of Spinach.
We can make this simple recipe with any variety of Rice. You can use any vegetables available in your kitchen. Apart from these we gonna need basic things such as Salt as per the taste, Turmeric Powder, Coriander Powder, Black Pepper powder or any daily use species you like to add.
Step 1 : Soak brown rice for atleast 1-2 hrs before cooking.
Step 2: Chop all the vegetables.
Step 3: Add a glass of water in the pressure cooker and keep it on the stove for cooking. First add Vegetables which need more boiling such as carrot and beans, meanwhile add salt as per the taste, add all the species powder as per the requirement. Stir it well. Cook the vegetables for two minutes on low flame. Then add chopped tomatoes, green chilli and spinach. Now add the soaked Brown rice in the pressure cooker and stir it well. Now close the pressure cooker lid and let it cook on small flame for 7-8 minutes.
Brown rice takes a longer time to cook than white rice. Close the pressure cooker after 6-7 whistles and close the stove. Leave the pressure cooker intact till its steam goes off completely.
Then open the lid and you can do dressing with black pepper, green coriander leaves or can put your favourite sauces into it.
Serve it hot or later with curd also. You can also add few drops of lemon juice.
This is very simple, healthy and nutrition rich recipe. It doesn't involve oil or frying only simple boil. This can be made into different variations where we can try different varieties of rice. We can add any seasonal vegetables available in the kitchen. This is easy to digest and fibre reach meal. Also one the best ways to include maximum Vegetables in our diet. I keep the vegetables quantity High as compared to Rice. It's a best option for lunch on Sundays. Enjoy this with curd, buttermilk, curries and green salad. I hope you will love it. Have a great day.
