Delicious yam porridge with ripe plantains. Mixed with green vegetables

How do you feel when you try out new things and it turns out to be good? Fine right? Yeah! This time around, instead of cooking only porridge yam, i decided to add rippped plantains to it. This mixture turned out to be delicious 😋 and a healthy meal as well. Let me take you through on how to prepare your's if you wishes to. The tray below contains all the ingredients and they are as follows.

  • 1 full tuber of yam

  • 2 ripped plantains

  • 2 full big spoon of oil

  • 4 fresh pepper

  • 5 fresh tomatoes

  • 1 full ball of onions

  • Green vegetables

  • Salt

  • Oil bean (ugba) and

  • Water

Step's and preparations

Pealing the yam by removing it's shel. Done with pealing off the back, i sliced them into smaller particles. Put in a clean bowel and washed the yam twice to make sure it's properly clean, then, i put it in a clean pot, cover and proceed with the pealing, washing, and slicing of the ripped plantains.

After washing the plantains, i sliced it into smaller pieces too to fit in with the size of the yam. Remember, it's food combination.

Done with that, i added the plantain in the same pot with yam. But the plantain was on top while the yam down the pot. Reason, the yam was enough while the plantain are few. Not only that, the yam is stronger than the plantain, i needed it to get done first before the plantains. And here is it

Step 2, washing of the vegetables

On this step, all i did was to wash the vegetables which includes the green vegetables, that's what we call it here, it's quite different from pumpkin and water leaf's. But before washing the leafs, i first select them one after the other by removing them from it's stem branches. Done with that, i washed it together with the fresh tomatoes and peppers including the onions.

While washing them, i added salt to it for the removal of sands and killing of bacteria's. After that i pound the pepper with mortar and pistol, then sliced the others with kitchen knives and here is all in one place.

Step 3 cooking

I made sure i prepared everything before i proceed with the cooking. Now that am done with the preparations, i put on my gas cylinder, place the pot that contains the yam and rippe plantains on it and added water. While it was about to boil, i added salt to it for taste. I covered to boil for 5 minutes then, i put the palm oil to it. I now cover it for another 20 minutes. By this time, it done.

I proceeded to the next level which is adding the oil bean and the pepper. I mixed both probably, cover and allowed to steam for a minute.

The i went ahead to add the sliced vegetables and, fresh tomatoes, onions and a little more salt because i tasted it to confirm if the initial salt was enough.

After the a minute heat, i added , the food is ready to serve.

You can join me now on the table. Without much ingredients, yam has it's own natural taste and together with the ripe plantains combo, it's taste was superb. I never imagine the task, but what i got was awesome. The green vegetables made the food more delicious and attractive, the fresh tomatoes added color to it, while the Onions gave it a nice flavor. With the combination of these healthy ingredients, i was able to enjoy my delicious vegan recipe.
