KUAH PLIEK
I make this dish very often because it is my husband's favorite dish, he often asks me to make it and never gets bored, if I don't make it for a few days he immediately asks. Therefore, I always have pliek in stock at home, sometimes he asks for it.
Did you know, the way to make pliek is a little unique, why not! The basic ingredient used in this dish is coconut meat that has been soaked until rotten, which is called pliek. This pliek can last for years. Pliek is not only used as an ingredient for cooking but also used for snacks such as mixed with snake fruit, called salak pliek and is also delicious as a dip for guava fruit.
The vegetables used in this pliek sauce vary and the number of vegetables is not certain, therefore this dish is also called 100 types of vegetables. However, in general this dish uses vegetables such as flowers, papaya fruit and leaves, melinjo leaves and fruit, peanuts, cassava leaves, torch ginger shoots, etc. But this time I only use a few ingredients. Some of these fresh vegetables I picked directly from the garden. Without waiting long, let's start making it!
Ingredient needed:
- 20 pieces of melinjo leaves
- 1 ounce of melinjo fruit
- 1 ounce of cempokak fruit
- 1 stalk of torch ginger bamboo shoots
- 1 purple eggplant
- 2 ounces of finger eggplant
- 2 stalks of curry leaves
- 1 stalk of lemongrass (crushed)
- 5 pieces of lime leaves
- 2 L of coconut milk
- 1 tbsp salt
- flavoring (optional) I don't use it
Finely ground spices
- 100 gr pliek
- 10 pieces of cayenne pepper
- 2 cloves of garlic
- 1 segment of turmeric
- 1 tsp coriander
Preparation:

First: Wash all vegetables, cut into small pieces or according to taste. Set aside
Second: Soak the pliek in enough water for about 10 minutes until it expands so that it is easy to smooth when blended

Third: Put small chilies, garlic, turmeric and coriander into a blender, add a little water to mash, after the spices are smooth, transfer them to a container, set aside
Next, put the pliek into the blender, also add the water from soaking the pliek, usually this pliek requires quite a lot of water when blended because it will be very thick later.

Fourth: Put all the prepared ingredients into a pan over medium heat, stir until smooth. Wait until it boils. Add enough salt, stir so that the coconut milk does not clump. If the vegetables are tender, turn off the stove.

The distinctive aroma of this pliek sauce is very appetizing, I want to eat it right away, this pliek sauce has a sour, savory, spicy taste, especially when combined with a variety of fresh vegetables and added with its mainstay spices, making this food taste so delicious. Believe it or not? Every time I cook this kuah pliek dish, my husband's appetite immediately increases until I have to cook more rice than usual hahaha it's always like that. Especially accompanied by sambalado and fried salted fish, it's a perfect dish.
