The children have kept their eyes busy on those who have come to do their acting business that they forgot the time for their lunch and to prepare it. I already told i don't want us to have rice but the insisted because they don't want to us to have what i have suggested as it was gonna be prepare it with natural and bitter veggies. So i went ahead to make it for just myself since they've already declined having it.
Making my crispy fried yam with local sauce
My ingredients for this recipe
- 6 pieces of scotch bonnet
- 100g of onion
- 50ml of palm oil (optional as vegetable can serve all purpose)
- 20g of utazi leaves (gongronema latifolium)
- 40g of cent leaves
- 90ml of vegetable oil of choice
- 600g of yam
- 1 teaspoon of salt
Now's the time to enter the kitchen come with let's make this lunch without delay, am famished. In this recipe i will hold your and show you the detailed steps if you promise not to walk out from the kitchen while we're on.
Step one
I carefully selected my utazi and cent leaves, washed them and pounded it well with my scotch bonnet then set it aside. Peeling my onions, cut it and also set aside. Next to peel was my yam, cut it, washed and sprinkled half teaspoon of salt on it.
Now that step has been taken, so we're moving to the next one.
Step two
Put my frying pan on fire pour my vegetable and then fry it, remember i did shallow frying and not deep.
Knowing my frying was going to take a while i went ahead to make my sauce. I put another pot on fire, allow it to dry up, then poured my palm oil in it. Note that the oil is just heathen up you do not bleach so as to get that palm oil look on the sauce. To move on i added my salt, onion and stir well. At this point i have to turn off the light to enable me still have that color. Lastly i poured in my veggies pounded with scotch bonnet.
Dishing it out, i was hearing i want to taste, left right and center from the people that said they never wanted.
