My local porridge cocoyam

Dear friends, my grannies used to and always tell me that local foods are nutritious, medicinal and healthy. I believed them and that made me to put interest in learning how to prepare them. It's as a result of this that cocoyam became my favorite. Cocoyam is of different types there are ones we use to prepare soups, while some are cooked according to ones choice.

So today i prepared my cocoyam porridge as my lunch, come with let me show you my recipe

Making cocoyam porridge for my lunch

My ingredients

  • 380g of mixed color cocoyam
  • 2 pieces of small fresh tomatoes
  • 20ml of red oil
  • 5g of cent leaves
  • 10g of onion
  • 4 pieces of scotch bonnet pepper

Step one
Washed my pepper and onion, sliced it and pounded them together. I love my pepper being roughly pounded, so i just did it that way.

Step two
Peeling my cocoyam, i have got two coloreselecting my cent leaves and chopping it.

Step three
My cooking started at this stage, poured my cocoyam and fresh tomatoes, introduced my red oil, onion pounded with fresh pepper.

After all the introduction, i put my pot on fire and allowed it to cook. When it was done i added my cent leaves, this vegetable isn't optional as it adds a good taste and it's medicinal.

I just plated the local well prepared dish, come join me have a bite or taste any of it.

Ive not tried making cocoyam porridge before. I usually roast or boil it but am definitely going to try this recipe.
