You know it's already the harvest season for most things we planted in the farm, and also some bonus stuffs like mushrooms we get there, so today we're cooking a very fresh okro soup and most of the ingredients used are homemade or freshly from farm. We're making a vegan version of the Nigerian Okro soup, please stay tuned!
In this recipe onions adds enough flavor to the soup so if you can add more onions than I did it'll be ok. So below are the list of ingredients I used for this:
- 15 Okro seeds
- Full plate if mushrooms
- 1 cooking spoon palm oil
- 1 tablespoon black pepper
- 2 balls of onions
- 1 handful pumpkin leaves
Procedure
- Wash the okro and slice them into tiny pieces and set aside

Next transfer them in a mortar and pound carefully, this helps to make the Okro more slimy and the best way okro is enjoyed is like that

Next, we prepare the mushrooms. Shred them into smaller pieces and transfer them in a bowl and wash thoroughly to make sure there's no sand or dirt on it, it makes sense because it was freshly gotten from the ground in the farm

After washing it thoroughly we set it aside in a clean plate

After the mushroom is ready. We chop the Onions and pumpkin leaves

At this point, we have everything set, so next thing, we get the pan, heat it up go in with the palm oil
Next we add the onions to it and allow it to sautee for seconds.
Next we add the mushrooms, stir them properly and allow it to cook down for a while. Then add the pepper to it

Then we add the okro to it and some salt and stir properly to blend in, also we allow the okro to cook properly. Then we are some water to it

Then we cover it up for a while and soon time to put the pumpkin leaves
We are the pumpkin leave to it and after a few seconds of covering the pan we stir it in and the soup is ready!
It looked really nice after it was done and it tasted as much as it looks, really delicious! But if I were to make this again, I'll add more onions to it, make it more flavorful!
We serve this with a well made garri (eba) and the combination is heavenly. The mushrooms were super fresh and tasted great, I hope you can try this too.
