Hello my friends at Hive, I hope you're all doing well and that you've started this week with a strong desire to keep going, fighting for your dreams. Here we continue to share irresistible and delicious vegan recipes, which honestly are just as good as the originals, or at least in my case, the ones I was used to eating. Today I'm bringing you a dessert. These days my daughter Micaela was craving some chocolate cookies filled with peanuts, and they were truly exquisite. I loved this combination, so I wanted to make my own version, haha. I made some vegan chocomani cupcakes with a peanut frosting. I can truly guarantee everyone at home will be delighted. They turned out to be a complete delight. I'm sharing the step-by-step instructions.

Delicious Vegan Choco-Peanut Cupcakes - Recipe


Ingredients:

  • 1 and 3/4 cups flour.

  • 3/4 cups brown sugar. You can use white sugar or any other sweetener you prefer.

  • 1 and 1/3 cups almond milk or warm plant-based milk. If you don't have any, you can use warm water.

  • 1 and 1/2 teaspoons baking powder.

  • 2/3 cups cocoa powder.

  • 2/3 cups sunflower oil, or whatever oil you have at home.

  • Peanut butter, to taste.

  • 1 tablespoon vanilla.

  • 1/3 cup black coffee.

  • 3/4 cup peanuts.

  • 1/2 teaspoon salt.


  • ​​For the cream, or peanut frosting, we need 3/4 cup of powdered sugar, 100 gr of unsalted vegetable butter, and 1/2 cup of peanut butter


Cupcake Preparation:

1- In the bowl of a mixer, sift the flour with a sieve, along with the baking powder, cocoa powder, and salt. Then add the sugar and mix well.


2- Then, with the mixer on at low speed, add the warm milk, oil, coffee, and vanilla to the liquid ingredients. Beat until smooth.


3- When the chocolate mixture is ready, it should be a chocolatey mixture, a little more liquid than other cakes. Remove the bowl from the mixer and add the peanuts, mixing well with folding movements.


4- In cupcake tins, use a spoon to add a small amount of the mixture, about half the size of the tin, and add a teaspoon of peanut butter. You can add more if you like. Then, add another layer of chocolate mixture.




5- Finally, bake the cupcakes for approximately 20 minutes. After 15 minutes, insert a toothpick. If it comes out clean, they're ready.

6- Once the time has passed, remove the cupcakes from the oven, let them cool, and then decorate them with the exquisite peanut butter frosting. Enjoy this wonderful combination of chocolate and peanut butter.

7- To make the peanut butter, add the vegetable butter and peanut butter to a bowl and beat until well combined. Then add the powdered sugar and continue beating until everything is well combined and you have a smooth mixture.
