I dont know about you, but I feel 2024 it went so so fast..way too fast! Probably thats just my perception considering what I did last year and everything that happened in my life lately.
I wanted to write a blog only to portret how my 2024 was, but time has passed by and I'm buzy here. In short, the thing is that now I am a mom of two and I have a newborn at home, which makes is harder for me to be active online and do things the way I did before.
....
Which is why I got to this post: Overnight Oats and Chia topped with pinapple, coconut and dark chocolate.

I did it before, but now it's even more important for me to find healthy, delicious and FAST recipes I can incorporate to our daily life. With a newborn, you can imagine that a momma's time is limited; especially when you have another kid(s).
So this recipe is exactly this: healthy, suuuuper delicious and Fast to make.
This combo is a winner! And I'm so happy pinkwizz shared it with me. Well, I kind of "stole" her recipe after having it at her place. Yummy yumm! And now I make it too, very often, especially in summer, for no particular reason.
Here's what you need:
Ingredients:
(Aprox measurements)
- oats (one cup)
- 1/2 cup or less hot water
- chia seeds (1-2 Tbsp)
- plant based milk (1 and a half cup), it depends on how much Water did you add)
- vanilla bean
- agave or mapele syrup (or honey)- use just a little or you can skip it if you'd like
Toppings - pinapple
- banana, blueberries or raspberries (optional)
- coconut flakes
- dark chocolate (I use 80%)
Instructions
In a jar, add oats, chia, milk, agave and vanilla. Mix everything and put it aside. This is one version and the fastest.
Second would be to boil the water and add it over the oats, let it soak for a few minutes and only after this step, you mix everything.
This step makes the oats to be more easily digested. And I think its better this way, especially if the kids serve it.

I usually prepare the recipe the evening before and leave it overnight in the fridge. But you can prepare it I the morning and serve it as a dessert, snack or even lunch.
I add the toppings just before serving.
This way, it feels fresh and the fruits arent moushy.
The only thing I make ahead is to cut the pinapple in pieces because usually, it takes a couple of good few minutes. It stays in the fridge just fine, even for a few days.
Also, you can't add the fruits right away because the oats and chia mixture needs to stay overnight to get texture and chill out.
The original recipe of my friend didnt have coconut flakes, this is something that I came with. She used to add raspberries or blueberries everytime. I found out that even bananas go wonderful with this recipe. And yes, raspberries are definitely a nice adding.
Caleb, my 6 years old son, doesnt like banana on his oatmeal, neither this recipe. He preffers berries instead, any kind. Me, for exemple, I love banana on oatmeal and on this one too. It makes the meal whole, smoother and sweeter.

The pinapple + dark chocolate is insanely delicious. You wouldnt say!
Overall, I would say this is a great idea for Breakfast to our kids. They get enough vitamins, fiber and plus, oats are something to keep them full enough.
