Whenever I roast a chicken or use a chicken breast with bone to make stock, I always set the breast aside after cooking to make one of our favorite sandwich fillings- tarragon and cranberry chicken salad! And it’s super easy and delicious!
Ready to make this? Ok here goes! You’ll be amazed how easy it is!
Ingredients
Whole chicken breast, cooked and shredded
2 celery stalks, finely diced
1/2 small red onion, finely diced
Juice of 1/2 a lemon
2 tbsp fresh chopped tarragon
2/3 cup chopped dried cranberries
2/3 cup mayonnaise
2/3 cup sour cream
Salt and freshly ground pepper
Directions
- Combine lemon, tarragon, mayonnaise and sour cream to make your dressing.
- Mix all ingredients together including dressing. Salt and pepper to taste.
- Chill for two hours.
That’s all there is to it! You can enjoy this salad as a canapé, on its own or how we prefer it- on wheat bread with lettuce. No need to add anything else as it is perfect as is!
