Ingredients

🍊 Juice of 1 orange
🍋 Juice of 1 lime
🧄 2 cloves garlic, crushed

For the Steak Seasoning:
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌿 1 teaspoon cumin
🌶️ 1 teaspoon paprika
🌶️ 1/2 teaspoon chili powder
🧂 1 teaspoon salt
🧂 1/2 teaspoon pepper

For the Quesadilla:
🥩 300g steak, thinly sliced
🌶️ 1 red pepper, sliced
🌶️ 1 green pepper, sliced
🧅 1 onion, sliced
🧀 200g mozzarella cheese, shredded
🌮 4 large flour tortillas


Instructions

1- Marinate the Steak:

  • In a bowl, mix the orange juice, lime juice, and crushed garlic.
  • Add the sliced steak to the bowl, ensuring it's well-coated with the marinade.
  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to develop.

2- Prepare the Steak Seasoning:

  • In a small bowl, combine garlic powder, onion powder, cumin, paprika, chili powder, salt, and pepper. Mix well and set aside.

3- Cook the Steak:

  • After marinating, remove the steak from the fridge and let it come to room temperature.
  • Heat a skillet over medium-high heat. Add the steak and sprinkle with the seasoning mix.
  • Cook the steak for about 3-5 minutes or until it reaches your desired level of doneness. Remove from the skillet and let it rest.

4- Sauté Vegetables:

  • In the same skillet, add a little oil if necessary and sauté the red peppers, green peppers, and onion until tender and slightly charred, about 5-7 minutes.

5- Assemble the Quesadillas:

  • Place a tortilla on a clean skillet over medium heat.
  • Sprinkle a layer of mozzarella cheese on one half of the tortilla.
  • Add some of the cooked steak and sautéed vegetables.
  • Add another layer of cheese on top (for maximum gooeyness).
  • Fold the tortilla over to encase the filling.

6- Cook the Quesadillas:

  • Cook the quesadilla for about 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese inside has melted.
  • Repeat with the remaining tortillas and filling.

7- Serve:
