Ingredients

🍍 1 Whole pineapple
🐔 1 Whole Cornish hen
🧂 Fry mix (seasoning of choice)
🫒 1 tablespoon grapeseed oil
🧈 2 tablespoons butter
🌶️ 2 tablespoons Trappey’s Red Devil Cayenne Pepper Sauce
🌶️ 2 tablespoons Huy Fong Foods Sriracha Hot Chili Sauce
🌶️ 2 tablespoons Frank’s Red Hot Sweet Chili Sauce
🍯 1 tablespoon honey (optional)

Instructions

1- Prepare the Pineapple and Hen:

  • Start by peeling and chopping the pineapple. Remove the core to ensure the dish isn't too fibrous.
  • Rinse the Cornish hen under cold water and pat it dry with paper towels. Stuff one small piece of pineapple inside the cavity of the hen for added flavor during cooking.

2- Coat the Hen:

  • Pour the fry mix seasoning into a plastic bag. Add the hen to the bag, seal it, and shake well until the hen is fully coated with the seasoning.

3- Air Fry the Hen:

  • Set the air fryer to 375°F (190°C). Place the seasoned hen on a rack inside the air fryer basket.
  • Lightly drizzle grapeseed oil over the hen to ensure a crispy skin.
  • Cook for 35-40 minutes, or until the hen reaches an internal temperature of 165°F (74°C) and has a golden brown exterior.

4- Prepare the Sauce:

  • While the hen is cooking, melt butter in a frying pan over medium heat.
  • Puree the remaining pineapple in a blender and add the puree to the pan.
  • Stir in the Red Devil Cayenne Pepper Sauce, Sriracha, and Frank’s Sweet Chili Sauce. Mix thoroughly.
  • Add honey for a touch of sweetness, if desired, and continue to simmer until the sauce thickens slightly.

5- Finish and Serve:

  • Once the hen is ready, remove it from the air fryer and generously cover it with the prepared pineapple sauce.
  • Let it rest for a few minutes before serving to allow the flavors to meld perfectly.
