TacoCat's TrEats #130: Mazesoba is AMazing! 🍜

Hey Hive!

Now that a lot of people here have already gotten vaccinated, I'm very happy to hear that Singapore is now allowing in-house dining again but obviously you have to be vaccinated. Now that there aren't any restrictions so this allows us to try out different restaurants again!

Since I was craving sushi again, we went to our go-to sushi place and also our favourite Japanese megastore - Donki Hote! Or, Don Don Donki in Singapore. Donki Hote is a Japanese discount store chain that sells all sorts of products from food and drinks to apparel and household goods. It's our favourite store to visit in Japan and we were so excited when it came to Singapore!

But a key difference between Singapore and Japan's Donki is that Singapore's Donki has a food court with plenty of different Japanese food stalls. Donki itself also sells a myriad of ready-made food like bento sets that you can purchase and bring to the food court to enjoy.

I bought my favourite sushi set which comprises 12 salmon nigiri but with different toppings.. The first is a standard Aburi (grilled) salmon sushi, next is Aburi salmon with Teriyaki Mayo and lastly with cod roe mayonnaise, or mentai-mayo!

I love Aburi salmon it's probably my favourite sushi but the different toppings introduce different flavours to make it even more unique. The teri-mayo is slightly sweet and has a more charred flavour while the mentai-mayo is more savoury and slightly spicy too. They must use spicy mayo for that which I really like as well.

So we buy my sushi set and head to the food court where Sean went to choose what to eat from the stalls there.

After a quick look around he settled on this Mazesoba shop called Kajiken! They even offered free noodle upsize for every order which was very tempting!

I read that Kajiken is known for being the first Mazesoba shop in Singapore. I'm not sure how accurate that claim is, but it did look pretty good. If you're unfamiliar, the name ‘Maze’ means to ‘Mix’ while ‘Soba’ refers to ‘Noodles’. Hence, the idea is that you will have to mix the noodles before you eat it.

So this was their menu. The prices seemed pretty reasonable compared to another mazesoba shop we've patronised.

I thought they only served mazesoba and was thus surprised to find that they actually do have normal brothy ramen as well!

But Sean decided to try their mazesoba and ordered the standard one with no toppings, which is called Taiwan Mazesoba Nagoya Style. It came with a blanket of spring onions, minced pork and nori on top of the noodles and an onsen egg resting in the middle, and it smelled soo good!

Each bowl of noodles also comes with a small bowl of soup and rice for you to mix in to the sauce once you've finished the noodles.

So first thing to do is to poke the soft boiled egg and release the yolk.

Then mix in everything!

Sean made sure to mix it and toss it up real good so that the egg, meat, veggies and spices were mixed homogeneously.

Once everything was all mixed up, it was time to try! And it was absolutely delicious! The minced pork had some spice to it which gave it a nice kick, and the spring onions made it more fragrant. The soft boiled egg gave more thickness to the sauce and was nice in evening out the spice. The soup isn't miso soup and was a little thicker than I would've liked but still very tasty.

Overall, it was really delicious and Sean finished the bowl so quickly I could barely take photos of it. After he was done he mixed in the rice with the leftover sauce and enjoyed some eggy spicy rice!

Kajiken definitely lives up to its Mazesoba and I'd say it's definitely worth trying! We'll be going back for more next time that's for sure. If you haven't tried it out, give it a shot!
